Got a big Texas sized iron smoker for Christmas so here I am at 4 am lighting a fire to smoke a couple of turkeys for today and surfing the web.

2. You're right about the flavor!

My daughter and son-in-law built their own brick smoker and they've done the Thanksgiving turkey the last two years. The flavor is amazing!
