17. The Southern Living Cookbook's "Sweet Potato Pie" recipe for Nov 4th :)
This is really easy and really YUM !
Preheat oven to 400.
2 cups cooked, mashed sweet potatoes ( I use organic for everything here )
1 cup firmly packed brown sugar
1/2 cup butter, softened
2 eggs, separated
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg ( I use whole nutmeg and grate it fresh )
1/4 tsp salt ( sea salt )
1/2 cup of evaporated milk
1/4 cup of sugar ( I use organic raw cane sugar )
1 unbaked 10-inch pastry shell
Whipped cream ( Best made from fresh cream )

Combine sweet potatoes, brown sugar, butter, egg yolks, spices, and salt in a large mixing bowl; beat until light and fluffy. Add evaporated milk; beat just until blended.
Beat egg whites ( at room temperature ) until foamy; gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold into potato mixture.
Pour filling into pastry shell. Bake at 400 for 10 minutes; reduce heat to 350 and bake an additional 45-50 minutes or until set. Cool.
Top with whipped cream as much as you want. Yields: one 10 inch pie.

Bake at 400 for

5. One day Obama started talking about all the pies he liked-- he
mentioned the word 19 times, I believe. I saw the clip on Maddow's show-- it was really cute. (This was at a campaign speech, BTW...)

19. He started using this story on the campaign stump in PA: While he was having pie,
Edited on Fri Oct-24-08 07:21 PM by CakeGrrl
two of the waitstaff asked to take a picture to needle their boss, a staunch Republican who owned the restaurant.

When the boss came out, Obama asked him "How's business?"

The owner replied, "Not very good. My customers can't afford to come in."

Barack says he asks him, "Who's been in charge for the last eight years?" The owner has to agree that it's been the Repubs.

Barack asks him, "If you keep hitting your head against a wall and it hurts, wouldn't you want to stop?" The owner agrees.

Barack then suggests "Maybe you should try voting Democratic for a change!"

Thus the moral of the pie story. He's used it a few times on the stump recently.

EDIT: Beat to it by YouTube! :)
