Poll question: What kind of beer should I make today?
Edited on Wed Apr-07-04 12:40 PM by Superfly
My bro is coming for a visit in 2 1/2 weeks and I need to get a keg of homebrew together. I was thinking something for the spring. I'm an all-grain brewer, so if you have any recipes or suggestions along those lines, that'd be great!

1. Blonde ale or golden ale.
I know bock is the traditional spring brew, but I like a nice blonde ale as the weather starts to warm up.

6. 2.5 weeks is rather short notice.
I'd go with a low-gravity bavarian hefeweizen with og of 1.030-1.035.

Or perhaps a low-gravity belgian wit.

I, myself, have been on a brewing rampage:

In the past couple of weeks, I have made five gallons each of:
* english bitter, dry-hopping now
* belgian dubbel
* bavarian hefeweizen
* baltic porter (but I'm using White Labs european ale yeast at ale temperatures, rather than fermenting with lager yeast at cooler temperatures)

Also, I have been starting a new 5-gallon batch of mead every month since November, and this month will be starting three:
* a high gravity tupelo honey mead (20 lbs honey in total volume 5 gallons)
* a 6-gallon batch of cyser (normal strength apple juice and 12 lbs of clover honey), which after the main fermentation, will be split into 2 3-gallon batches and each dosed with 100 oz of fruit puree (one blueberry; one raspberry)

9. I have over 100 liters of mead in various stages
of fermentation stashed around my house...

If it's not mead, it's crap!!

26. Make a Lambic.
Of course, you'll need a nice supply of wild yeasts. And a good long while.

Perhaps you should consider moving to Lembeek. I hear everyone has a brewery over there.

And there ain't nothin' in the world better than a good, old Geueze.
