"Sir" in the south is often used as a form of disdain. It's a very old idea and probably held over from the British, perhaps a layer of slaves getting back too.

It is said with great irony, noting that the person who is "sir-ed" doesn't, in fact, deserve to be called "Sir."

On second thought, probably all of this is way too subtle for pea-brained *.
