Roasting green peanuts
I got 5 lbs. of green Super Jumbo peanuts from Fidler Farms today.
They're about 20 miles up the road.

The nuts are HUGE.
Never seen any that big before.

I haven't roasted any in a while so I went online for some guideline.
About 20-25 minutes in a 350 oven was the consensus for RAW peanuts.

This didn't sound quite right.
So I searched for 'oven roasting GREEN peanuts'.
(These are about 1 day or less out of the ground. They were harvesting while I was there.)
Same results.

My peanuts have been in the oven for over an hour and they're STILL not done.
Steam is still rising from them and they taste like hot raw peanuts.

I think these 'recipes' are for DRIED (and older) raw peanuts.

I'm sorry - I know that doesn't help with your situation. I have no idea what to do about that. But there is a guy in Savannah that lived down the street from my wife's cousin that made the best boiled peanuts I've ever had. He was one of the reasons I loved visiting her folks in Savannah.

2. Will boil some.
Cajun boiled.
Use Zatarain's Crab Boil and a few other spices.

Roasting (or trying to) about 2 lbs.

Would also like to make some salted-in-the shell.

6. Mmmmmmmmm that sounds great!
Sorry the roasting isn't working...IF I knew that guy's number (or hell, even his name) I'd call him and ask him if he had roasting advice. I guarantee if there's something to be known about peanuts, he knows it.

3. I think you boil the green..
and roast the dry ones. I sam seeing them on the roadside for sale also, have to boil some, yummmm.

That's how big they are.

7. Did you toss them with vegetable oil first?
The oil helps conduct the heat. I just line a cookie sheet with foil, spread out the peanuts, toss/drizzle/toss/drizzle. I sprinkle them with salt at this point also, but naturally you can leave this step out if you like them unsalted.

I never had to roast them more than 30 minutes or so, but I never tried big ones right out of the ground. As with just about anything you roast, they will continue to cook a bit after you take them out of the oven, so you want them on the ala dante side of done when you take them out.

8. These are in the shell.
Don't think oil or salt would have much effect.

10. It does.
The shell is an integral part of the roasting process, even though you don't eat the shells.

I've never tried it without coating them will oil first, but I suspect if you don't it will add to the cooking time and the results won't be quite the same. I think commercially roasted peanuts are cooked by convection, which is why they don't use much oil, if any.

9. My dad and grandpa used to raise peanuts.
They would put a cedar pole with a sharpened end in the ground(sharp side up), and stack the peanut plants around the pole.
They would stay like that in the sun for about a week or so, drying out. If it looked like rain they'd cover the whole thing up.

I suspect that the peanuts you have need to dry out before you can do anything with them.

13. Newspaper story I read about green peanuts:
Back in the 50s in Birmingham, AL.

Paraphrased as best I can remember:

"John Jones, a resident of Fairfield, died Saturday from a ruptured stomach. Witnesses reported that Mr. Jones had eaten a "hatfull" of green peanuts and then drank "about a gallon" of water.

According to the medical examiner, the green peanuts swelled in Mr. Jones' stomach and caused the rupture."
