My middle daughter has learned well. Her stuffed portobella caps were better than mine.
I'm pretty snobbish about my creations, but willing to share the secrets with those I deem worthy, such as my wife and children. My middle daughter is the one who has taken the greatest interest. Last night she brought me a stuffed portobello cap and I damn near melted. Mine are great, but she had managed to exceed my abilities. The consistency, moisture content, hold-together, spicing, mouth-melting factor, everything was a notch above my best. I take this as a compliment, not a challenge. Shall they all exceed what I can do.
