What is your go to recipe for pot luck dinners? Mine is the taco dip with the layers
of cream cheese, salsa, cheese, onions, olives served with tortilla chips. Of course it ends up being one of three of the same. Great minds think alike. LOL!

I like to make up new things.

But my go to in a hurry and especially in the summer - cucumber salad with tomatoes, green peppers, onions, olives and sometimes shredded cheddar tossed with a ranch dressing - or feta with a vinagrette.

My most requested is buffalo wing dip followed by loaded baked potato salad.

Another in a hurry - baked beans - a couple cans of bushes, with black beans, french cut green beans, some ground beef and seasoned with brown sugar, garlic powder and some other spices.

I like the layered taco dip too! :)

6. my Michigan virtual coworkers swear by "chicken dip"

I intend to make it for our next pot luck:

1 large can chicken drained
1/2 cup hot sauce (Frank's, Crystal's that sort of thing)
8 oz cream cheese
1 cup ranch or bleu cheese dressing
1 cup shredded cheddar cheese

Mix and heat chicken and hot sauce in a medium sauce pan breaking up the chicken. Add in dressing, cream cheese and cheddar cheese. Heat on low-ish heat until the cheeses are melted.

It doesn't seem to make any difference if you use low fat, full fat, name brand, cheap brand... some brands of hot sauce do seem to be hotter, and sometimes saltier than others though.

8. Spinach casserole w/3 cheeses

Disappears and I never EVER get any leftovers to take home.

cooking oil
6 eggs, beaten
16 oz cottage cheese
8 oz cream cheese diced
6-8 oz Swiss cheese, diced
10 oz frozen chopped spinach, thawed and squeeze to remove liquid

1 Lightly grease 8x8 (can use 9X13. but will be shallow). I use glass as the FINISHED product
is amazingly beautiful.

2. Mix together all ingredients (this will LOOK nasty) and pour into baking dish.
.
3. Bake at 375 for 45 minutes (start to check for proper browning at about 35-40)
.
4. Enjoy. I also notice no difference whether I use regular or lowfat cheeses -- though
I would hesitate to use fat-free.
.
This is much like a crustless quiche.
