1. Those are not "tacos" as they are known in the Bay Area.

Basically, a taco in a taqueria is a burrito minus the beans and rice filling.

2. In non-gringo places you have to ask for tacos durados, but yeah in Mexico

you are.almost inevitably going to get soft tacos, and they are snack/street food, not entres. And to me, hard or soft, tacos are in CORN tortillas.

3. I've been getting a real education in "authentic Mexican food."

My education definitely began with Taco Bell.

I see it the same way that I see my own Italian cooking.

There's food, and then there's cuisine.

I've been getting some backstage looks at true Mexican cuisine and it's been truly enlightening.
