Post a quick cooking tip. If you put cheddar cheese on a piece of bread, sprinkle it with a tiny
amount of garlic salt and put it under a grill, it makes for an amazing snack.

1. For perfectly boiled eggs that don't have a green tinge around the edge...
of the yolk, it is important to bring the eggs just to a boil, then let them steep off the heat for exactly 10 minutes.

Mixing ingredients, that sort of thing. Hell yes that's cooking!

Of course, anything on vanilla ice cream is great. Peanuts, chocolate, honey, bacon, garlic, whatever you got.

15. The secret to great black beans is to let them sit overnight at room temperature...
then reheat them before serving. They break down and get thicker and smokier overnight. Nothing else but time can do that for your beans.

Likewise, making Chipotle-style lime rice is easy.

Start with basmati rice. Toast it in a skillet (one that has a lid) with 1 lime wedged and a pinch of sugar. (The sugar is for the limes mostly) Add the appropriate amount of water (1.5 cups for per 1 cup rice.) and a pinch of salt. Stir and cover.

When it begins to boil (which in a hot skillet should be seconds, not minutes), lower temperature to very-low heat.

Chop cilantro. "Too much" is almost always exactly enough.

Cook rice until done...usually about 12 minutes in my experience, much shorter on gas, much longer on those awful solid-state induction range-tops.

Remove limes. Add a good squirt of lime juice (or juice of 1/2 lime) and cilantro. Stir until mixed well.

Buy really good fresh salsa

Bowl it up and add whatever else you put on your Chipotle burrito bowl. I like rice, bean, salsa, corn, guac.

They travel well for school and work lunches too and can be made in bulk as both the rice and beans will keep for a week. I figure I just saved some of you a few dozen $ a month and made some of the rest of you a bit fatter. I eat this 2-3x a week and that's why I jog 5K daily.

27. Cool. Glad to help.
Some things; the major flavor contributors in their food are the salsas and the meat (that I don't eat, though some stores have a (vegan) "garden blend" which is seitan seasoned with the same spice-blend as the chicken and the steak. That I love when I can find it.) and since they make the salsa in-house and won't give you the recipe (or the ones for the meat seasonings) it'll only be close, not exact. I've found a good match for the Verde (Arriba-brand Salsa Verde) and Pico de Gallo is mostly all the same, you just have to buy it fresh. The Corn salsa and the Hot red salsa I've had no luck.

Sometimes the rice comes out gummy/sticky (even with the rice cooker) and I can't ID the cause. I think it has to do with how juicy the limes are.

Technically the rice recipe is the same in all these types of places (Chipotle, Qdoba, etc.) and if you're really lazy, both pre-seasoned beans and a mix for cilantro-lime rice can be bought at Target. The beans are cheap (under $1/can) but the rice mix is not (like $3 for enough for two servings...you might be able to stretch it to 4 if you mix it with plain leftover white rice.)

The rice recipe is as easy to make a lot as a little so something I've done is Chipotle Pot-luck or Swap. I make the beans and the rice. My past roommate who makes salsas, brings salsas. Another grills meat and his gf makes guac...so we have a swap, like a cookie-swap but with not-authentic-Mexican Mission-style burrito-foods. That works best...it makes a good dinner party theme too...especially if someone brings cerveza (beer).

Put a bit of powdered ginger, some dehydrated onion, and soy sauce in the rice cooker with your water and rice.

If you use a saucepan, do the same, but you really ought to invest in a rice cooker. You can steam veggies and do all kinds of great things.

And to make it even more flavorful, use beef, chicken, or vegetable broth in place of water.

You can make some egg while the rice is cooking, and nuke some frozen peas in the microwave.

If you have sesame oil, stir in a teaspoon of that too.

Stir it all together and voila.

Microwave the potato first, one potato, at 100% for 222 secs works for me. They brown up nice and crusty on the outside, but stay soft and creamy on the inside.
