I've been on an avocado kick lately, and would like some recipes involving avocados
if anyone in the lounge tonight is feeling so generous, the place down the street was selling a turkey,cheddar, and avocado sandwich and it was quite good ( on whole grain bread with spicy mayo ) It made me want to experiment with different dishes involving avocados and the only experience I've had with the things was guacamole ( besides this sandwich, really )

1. Here's my thread from last winter about avocado bread
It was quite good, had a subtle avocado flavor and a delicate olive green color that didn't really show well in the photo.

Not necessarily what you had in mind, but definitely would make a nice base for that sandwich.

19. great quick salad
Dice 3 ribs celery
Dice l med-large avocado
Dice 1/4 small sweet white or purple onion
Mix with 1/2 teaspoon celery salt or plain salt if you prefer
Add 1-2 tablespoons fresh lemon juice
Stir gently, don't mash

Cover with plastic wrap,
refrigerate for at least one hour
Serve as a salad with almost any meal

3. Chilled avocado soup is great this time of year.

4. Here is my favorite thing to do with an avocado
And it is so simple. I've been eating them this way since childhood.

All you need is bread, salt and garlic powder.

Toast the bread.

Mash up the avocado and add salt and garlic powder to taste.

Spread the avocado mash onto the toast and enjoy.

5. Ya getcha some good sour pumpernickel and spread half a mashed avocado on a slice.
Ya add some cheese (bit of swiss, say, or spread some cream cheese on another slice)

Ya getcha some tomato or sprout or cucumber or other moist veggie and put some on

Then ya make yaself a sammich by puttin it all together

Then ya getcha some good cold beer, mebbe heineken

And ya sits in the shade outside to munch and sip

Diced avocado on a cup of chili is also great.

8. I got this from a blog...and it's become my favorite ever side dish.
I don't always follow all the ingredients and I'm not a sea salt snob. I actually got rid of the salt because it doesn't add anything.

1 cup(250 g) brown rice
1/4 teaspoon tumeric
1 teaspoon sea salt
1/4 teaspoon corriander
6 cups assorted wild mushrooms, cleaned (That's from the recipe. I use all sorts of grocery bought mushrooms)
1 tablespoon olive oil
2 garlic cloves, minced
juice of 1/2 a lemon, plus an extra squeeze
extra sea salt and freshly ground black pepper
2 avocados


Preheat oven to 300F (150 C)

Put the rice into a saucepan with tumeric, salt, corriander, and 2 1/2 cups (600ml) water. Bring to a boil, then cover and leave to cook for 15 minutes. Remove from heat and leave, still covered, for 5 minutes.

Saute' the wild mushrooms in the oil until tender, adding the garlic and a squeeze of lemon juice toward the end of the cooking time. Season with salt and pepper.

Halve, pit, and peel the avocados, coat on both sides with lemon juice and season with salt and pepper.
Add the remaining lemon juice to the rice mixture--it will immediately brighten the color.

Fluff the rice with a fork, then spread on a serving platter. Tope with the avocado halves, cut-sides upward. Spoon the mushrooms onto them, heaping them up but leaving a rim of green showing. Leave in the oven for up to 15 minutes. Any longer and it gets "icky".

I learned the "icky" part the hard way.

10. I was on an avocado kick once.
I HAD to have them. I ate avocado practically every day for two months.

Of course I was pregnant. Did you check that? I mean, I know you're male and everything, but you never know. They have tests at the drugstore.

If you need more ideas you could mix chunks of avocado into your favorite chicken salad. Delicious.

Chicken Tacos with Mango-Avocado Salsa

1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon ground red pepper
3/4 teaspoon salt, divided
4 (6-ounce) skinless, boneless chicken breast halves
1-1/2 teaspoons olive oil
1/2 cup diced peeled mango
1/2 cup diced peeled avocado
1/2 cup chopped tomato
1/3 chopped onion
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon minced jalapeno pepper
8 (6-inch) corn tortillas

1) Heat a nonstick skillet over medium-high heat. Combine first 4 ingredients & stir in 1/2 teaspoon salt. Rub mixture over chicken. Add oil to pan; swirl to coat. Add chicken; cook 4 minutes on each side or until done. Remove chicken from pan; let stand 5 minutes. Cut into 1/4-inch-thick slices.

2) While chicken cooks, combine mango and next 6 ingredients (through jalepeno); stir in remaining 1/4 teaspoon salt.

3) Heat tortillas according to package directions; top with chicken and salsa.

Yield: 4 servings (serving size: 2 tortillas, 1 chicken breast half, and 1/2 cup salsa).

12. Chicken Newburg
Awesome recipe!

Ingredients

1 onion, chopped
3 tablespoons vegetable oil
1 teaspoon salt
1 pinch ground black pepper
1/4 teaspoon dried tarragon
1 cup chicken broth
3 tablespoons all-purpose flour
1/2 cup milk
2 cups diced, cooked chicken meat
1 egg yolk, beaten
1 tablespoon lemon juice
1/4 cup sherry
1 red bell pepper, chopped
1 avocado - peeled, pitted and diced
6 slices toasted white bread

Directions

Saute onion in oil for about 3 minutes. Stir in the flour, salt, ground pepper, tarragon, chicken broth and milk and cook until the mixture thickens, stirring constantly.
Add the chicken pieces to the mixture. Blend in the egg yolk, then the lemon juice, sherry and bell pepper. Cook until chicken is heated through, about 5 minutes. Stir in the avocado and serve on toast! Voila!

When I made it I didn't have any bell pepper and I served it over brown rice rather than bread. But it would be good on some of my whole wheat bread, I bet.

14. grilled cheese and avocado
take a slice of cheddar cheese and a slice of colby jack or another cheese that you really like and sliced avocado and grill it like a regular grilled cheese. Yummmmmmmmmmm.

16. Cucumber soup with avocados
For 1 person:

Peel and dice half a cucumber

Put the cucumber in a blender with about a cup of plain low fat yogurt

Add 1 tablespoon of fresh avocado.

Blend until smooth.

Pour over the rest of the avocado after dicing it into a serving bowl.

Add salt to taste.

make it nice and fluffy, and fill with ripe avocado, gruyere, and and pressed garlic (gotta be through a press - takes a lot of the nasty edge off of it) to taste. Yum.

18. Halve an avocado, the long way.
Use a little lime juice (I prefer key limes, also known as limones in Latin American bodegas) to keep it from turning brown. Stuff the seed depression with freshly made shrimp salad. That's it. Eat. Enjoy.

21. Unusual but delicious: Shrimp/Avocado/Watermelon Salad
* 1 pound frozen, fully cooked medium shrimp, thawed
* 1 medium red onion, thinly sliced
* 4 cups watermelon, roughly chopped
* 2 jalapeños, seeded and finely chopped
* 2 avocados, roughly chopped
* juice of 1 lime
* 1 teaspoon honey
* 3 tablespoons olive oil
* 3/4 teaspoon kosher salt
* 1/4 teaspoon black pepper
* 1/2 cup fresh cilantro leaves, roughly chopped

Directions

1. In a large bowl, combine the shrimp, onion, watermelon, jalapeños, and avocado.
2. In a small bowl, whisk together the lime juice, honey, oil, salt, and pepper. Pour the vinaigrette over the salad; toss.
3. Sprinkle with the cilantro. Set aside for 10 minutes to allow the flavors to meld.

(Obviously you can omit the jalapenos if you're not into that.)
