Has anybody here been into the tournedos? (I know you've all seen them)

Some prefer them wrapped in bacon, and topped with a nice dab of pâté.

I prefer a flambéed Steak Diane myself, but I do tend to like the basics.

1. I haven't seen any tournedos around here, and wouldn't know what to do with one if I did.

'Cept maybe flame a little cognac off over the pan drippings, add in some demi-glace, some crushed green peppercorns, chopped shallot, a little dijon and some heavy cream and let it reduce down to the essential flavours. Place warm tournedo on a bed of sauteed mushrooms, top with pan sauce, scarf that puppy down and moan with pleasure at every bite.
