I feel like making my mom's Mac and Cheese tonight
It's pretty much made from scratch and yummy as hell.

It includes Cheddar Cheese soup and Sharp Cheddar Cheese.

2. That's what I use
...and I've made "designer mac & cheese" recipes from the food magazines where I've dropped $$$ on fancy cheese and tinkered with it for what seemed like hours and it never comes out better than the cheddar cheese soup & sharp cheddar ten minute variety. Boil the macaroni, heat the soup, milk, cheese in a saucepan, drain the mac, mix it in the soup, put it in the baking dish, put a little more cheese on top, add bread crumbs and paprika, bake @ 350 for 30 minutes.

I've done the same, tinkered with different recipes and all have been disappointing. I've never heard of your version, and will try it soon!

...and have been disappointed by "from scratch" versions... not because
they weren't delicious, but because I had unrealistic expectations about
how good they WOULD be.

Mac and cheese (5 for a buck) was a college-life staple -- made "fancy"
and less bland gruel-like ("May I have some more, sir?") by the addition
of a can of tuna fish, some frozen green peas, and some cayenne pepper.
Towards the end of the month -- that could be stretched to TWO meals.

Leaving some ESSENTIAL beer money available.

Salsa was a good topping for it... and/or Parmesan cheese.
