Stupid lazy omelette I came up with the other day
6 eggs
70-80 grams of ground Parma cheese
2 onions, chopped into tiny pieces
2 tomatos, ditto (everything except that woody core)
1 tablespoon mashed garlic
A bit of oregano for a remotely pizza-like taste
Some powdered pepper
Salt (very little, parma cheese is quite salty)

Mix everything and drop on hot teflon-coated frying pan (best with those with vertical walls). Whether or not to use a thin layer of cooking oil I leave to personal preference.

The trick is how to turn around the thing when one side is done. IMHO the best solution is to have TWO identical pans, heat the second one and turn one over the other. Unfortunately, my other pan isn't teflon-coated and the omelette stuck in some places, causing some structural damage. Nothing that detracted from the eating pleasure.

In ideal conditions, you should end up with a neat circular object.

Wifey and 3yo loved it. The older one is of the anti-food ideology -- she doesn't like anything. :mad:

2. Sounds great!
I'm in a late-night omlette mood, but there isn't an egg in the house! Bummer. The 40-mile round-trip to the 24-hour Food-Lion in Brevard is not quite worth it tonight.

4. An easier way is to
slide the omelette onto a paper plate. Put the pan over the raw side and turn it upside down. That's how I do it.
