10. It's the gelatine produced by the pressure-cooked bones in that can . . . calcium-rich, BTW.

When we were newlyweds, my husband and I used that same brand of canned chicken to make a bland creamed chicken or chicken ala king to serve on toasted stale bread. We stopped purchasing the overcooked canned stuff when I finally mastered the art of cutting up a whole fresh chicken and learned, more than fifty years ago, that fresh was less expensive. But, considering the price of fresh chicken today, the canned product might be the better buy . . . depends on the recipe you're using and how much time and patience you have for removing chicken bones beforehand.

FWIW: farm women have been using home-canned chicken since jars were invented. Today, however, when it seems too expensive to raise a few chickens, some farm women watch for a bargain at the supermarket, etc. . . . and, though most of it goes into the freezer, some of those store-bought chickens still end up pressure-canned by women who, long ago, learned the advantages of having a few jars of canned chicken on hand during a lon-n-g winter power failure.

3. When I was a tween, I cooked for my family
My mother went back to school, so I was the cook. I used a cookbook and made some pretty good, albeit standard, fare. Anyway, she had one of those chickens in a can, way back in the cupboard, I made chicken and dumplings with it and everyone loved it. It wouldn't be good for every chicken dish, but for soups and things, it works.

14. Wow, my mom used chicken in a can all the time (1950's)
She made delicious chicken with homemade noodles - however, I did not know what it looked like coming out of the can. That's disturbing!
