7. Gas is great for quick sears
I'm partial to barbecuing and smoking so I opt for charcoal and wood. I have one of these:


The Weber Smokey Mountain. A thing of beauty. I well up just thinking about her.

I've got a friend who's seriously into smoking. Pork butt heaven.

This thing is just as easy to cook with as is grilling with charcoal in a regular grill. I load it up, bring it up to temp, set the vents and I come back when it's done. This isn't to say you can't go apeshit crazy with temps, settings, styles, smoke, etc. But shit, if I want to smoke a pork tenderloin and I don't feel like fussing, I just throw it in there and I'm set a few hours later.

Also, bbq is a great hobby to get into if you make homebrew beer because both are time consuming. you can do both at the same time in your backyard!

Edited to add: I hope you're happy with your new grill. Grilling is fun, period! And thanks for the compliment on my turkey. That was the first one I had ever smoked and it's still talked about in some circles.

12. I've become a complete slug. Used to use a huge Big Green Egg as a smoker.
Now I use an electric, thermostatically controlled, fire-and-forget smoker. Uses a lot less wood too. Purists sneer, until they have some of my brisket, pulled pork, or whatever. They're not cheap, but if you use it enough, it can be worth it. Go about half way down this page - http://www.cookshack.com/residential-barbecue-smokers . And I can personally attest that they make an excellent companion to a gas-fired Weber ....

13. I saw one of those on the show "Diners Drive-ins & Dive" the other night.
A guy with a pizza restaurant had one of those smokers out in the alley - he smoked salmon in it.

The host of the show says "You've got a $50,000 pizza oven in your restaurant, and you use a $700 smoker in the back alley?"

"Yup".

15. They actually make a small mesh rack for seafood
for this item. Works really well. What that rack Also does really well is to hold nuts. I like a lightly brined and spiced mixture of almonds, pecans and walnuts, smoked for a couple of hours. Most excellent.

17. I have the stainless version of their smallest -
a version they do not make any more. This, apparently, is their updated version - http://store.cookshack.com/p-113-smokette-sm009-2-stainless-steel.aspx . Stainless costs more, but I live on the Gulf coast of FL, so I really don't have a choice. If I lived inland, I'd probably get the non-stainless version and save some money. Anyway, it's good for a small group.

That said, I've had it for seven or eight years, and I would like to move. And when I do, I'm thinking about donating this one (so that I don't need to move it - these things are well made and they hold up well), and I believe I might upgrade to a larger one, as I keep getting hit up to smoke stuff for people, or groups, and this larger, improved (and much pricier) model would make that a lot easier - http://store.cookshack.com/p-115-amerique-smoker.aspx If I were thinking about trying them out for the first time, though, and you never cook for a larger group than eight or ten, the smaller Smokette version (the one I listed first) will be just fine and will serve you well for years.

On review before sending this out, it is not clear to me that they make a non-stainless version of the Smokette any more. Too bad, because the stainless was an extra Benjamin or two, as I recall ....

5. Tonight a couple of steaks
They're marinading right now, in a lemon-garlic concoction. I'll also be grilling some foil-wrapped sliced potatoes/onions in lemon & olive oil, along with some asparagus.

30. I almost had a heart attack last night.
1st period started out strong, then the wheels came off in the 2nd. Finally managed a penalty kill without getting scored on, and the momentum shifted back to the Canucks in the 3rd.

I am a charcoal griller myself, but applaud your choice of Weber. Not only made in the U.S., but great customer service if you ever need to call them. I once ordered a replacement part over the phone, and they sent it to me with no charge for both the part AND the shipping.

Been a loyal fan for 14 years. Enjoy yours!

I have a (much older) Weber, and use it every weekend. 65 and sunny, or 10 with a foot of snow, no matter.

Of course, if it's 65 and sunny, I may hang out by the grill while the food cooks. Not so when it's 10 and snowing.
