Most apples sold commercially are varieties bred to keep for a long long time.

Flavor is secondary.

Local varieties generally don't keep, and are only sold locally.

(She made the best everything else, too, but that's another deal.) So, the corner of the universe that I could grab in the family was the rhubarb custard pie corner. I could make one of those in 20 minutes of returning home from the Friday night club. lol
