OMG, I am dining on the most delicious Risotto...
I only discovered Risotta a few years ago. I know, I'm slow. I don't make it often, but when I do, Yowzers!

Mushrooms, Kale and a bit of chicken thrown in toward the end. Ohhhh. Mouthgasms! Perfectly soft and creamy on the outside and with just a bit of tooth, Yummmmm.

Melt 3 TBSP butter, saute 3 TBSP onion until transparent. Add 1 cup rice and stir until well coated with the butter. Add 1/3 cup dry wine - I use whatever is open - and a pinch of toasted saffron. stir while cooking until wine is absorbed. Then proceed with 2 cups chicken broth a bit at a time adding and stirring until absorbed. I do test the rice grains until it's at the point I want it. Then I added 1/2 cup shitake mushrooms, I leaf of chopped kale and some chopped leftover chicken. Then just before the last of the broth was nearing absorption, I added 1/2 cup parmesan.

The package had the basic recipe and it was my choice to add the mushrooms, kale and chicken cause that's what I had on hand.


Voila! That was enough for two of us and my husbands lunch tomorrow. Lucky man.

3. That's one of my favorite combos in risotto. The mushroom and chicken are a natural, then
the kale add a bit of wonderful bite. I learned how to make risotto about 15 years ago and, though I don't make it often, it's a dish I can make with my eyes closed. It's the best, isn't it? Enjoy!
