6. It is like shaking hands. Every one bows; it's the universal greeting.
The tricky part is the depth of the bow which is based on status and rank. Your example, you are a customer which gives you a great deal of status. On the other chefs always have status especially on their turf, so complex calibration. As with any social situation, politeness is the smart default -- bow a bit lower.

No doubt that's what President Obama decided being an intelligent, well mannered individual. He and the Emperor are heads of state (equal status), but given how the Japanese feel about the Emperor, as a guest in his home, show him respect.
