Any good sweet potato or yam recipes?
I'm boiling 6 of them right now because my Mom loves them. I am indifferent to them, although I know they are nutritional all-stars, they have never really appealed to me. (Except sweet potato fries, which I love with blue cheese.) But I don't know what to do with them except mash them. My sister makes a whipped sweet potato casserole on Thanksgiving which is really good but she's out of the country at the moment. Any suggestions for sweet potato or yam recipes?

1. This sounds weird, but cubes or slices of cooked (not mushy) sweet potatoes are good on salad.
Works best with a creamy salad dressing like green goddess. The sweetness offsets the tang of the dressing and is a good contrast to the crunchy vegetables in salad. I use grilled or baked sweet potatoes this way because boiled are a little too mushy for my tastes.

Other than that, I mash them and mix in minced fresh herbs (whatever I have on hand) or add a little balsamic or wine vinegar to them along with a little butter or olive oil.

3. sweet potato buttermilk biscuits are good
...and sweet potatoes are great peeled and baked in cream and some chipotle chiles

You can make delicious sweet potato home fries with a bit of red onion and some herbs -- rosemary or thyme perhaps. Fry them with a mixture of butter and olive oil in the bottom of the pan.

Roasted sweet potatoes just like baked potatoes, served with butter and a drizzle of orange marmalade -- that's yummy!

7. I think what turned me off of sweet potatoes years ago was
that we only had them on Thanksgiving and they were canned yams, with lots of brown sugar and marshmallows on top, and it was such a sticky gooey mess with such a strong flavor that I couldn't handle it. But my sister started making it a few years ago as a casserole, and she whips it so it's fluffy, and she does put a few marshmallows here and there but they are like accents rather than a blanket of them. That's kind of like what I had tonight but no marshmallows and no pecans either, but it still tastes good and not overly sweet, just lightly sweet.

6. you can always add some to any kind of stir fry, or stew/soups
might want to pre cool a bit but with stir cooking you can add any kind of vegs to the mix

as for dishes "featuring" them - I'm with you - deep fried :9

10. that "pre cool" was supposed to be "pre cook"
either cut thin/small or pre cook a bit in the microwave or steam/boil for a few - experiment until you get a texture you like

12. Mashed potato-sweet potato-yam with garlic
1 regular potato
1 sweet potato
1 yam
1 or 2 cloves of garlic

peel them, cut them into chunks, cook them in some water with the lid on until mashable. Then add butter, salt, milk, pepper. Basically the same way you make regular mashed potatoes.

13. Take baked sweetpotatoes and slice them
layer them on a baking rack and give them a squirt of honey mixed with red chili pepper and salt. Bake them again until they are brown and crusty

Or slice raw slices and layer them with sliced apples and some butter. Put a squirt of maple syrup on top and bake until done.

14. Bake them with brown sugar and cinnamon.
Mashed potatoes made with half regular potatoes and half yams are really good, too.

15. Stir-fry in large (1") chunks so still soft in center, not crisp like fries.

Then sprinkle with cinammon and confectioner's sugar. Important to use a light oil without strong flavor.

This supposedly Mongolian recipe is one I remember from a Chinese cookbook.

17. Maple-Coconut sweet potatoes.
I do them on the stove top then bake it to dry it out a bit.

Butter/olive oil/smart balance

bit of water

Chopped potatoes or yams

1/4 cup of maple syrup per pound (i guess...I don't measure)

flaked coconut

Cook it on the stove (all ingredients at once) with a lid

Switch to hot oven to dry out the top a bit

yummers.

18. I've been looking to try them in gnocchi.
There was a recipe in gourmet magazine that sounded really good, but called for chestnuts, which I have yet to see in the market this year.

21. i mix them with drained crushed pineapple and then toss in some coconut
i then will put this mashed mixture into a baking dish, and i sprinkle brown sugar and pecans over top

bake till the brown sugar melts and the dish is hot.

yummy with ham

They're also good roasted, along with other root vegetables, some herbs, and some winter squash if you have it. You can eat them that way, or puree them with some stock for a nice soup.

26. I made this recipe with yams instead of potatoes - nice flavor

Santa Fe Chicken with yams

1 pound skinless, boneless chicken cut in chunks
I jar salsa or 2 cups homemade
I can corn or fresh kernels
3-4 yams, cut in cubes and microwaved until mostly tender
optional
I onion chopped
1 green pepper chopped


Saute onion and green pepper until soft
Saute chicken in a tbs or 2 of olive oil or use cooking spray over medium heat, in a sturdy skillet until done or browned
add microwaved yams, stir in and continue to cook
add canned corn, and then salsa and stir in, and put on low heat for about 3-4 minutes

Serve with butter, salt and pepper. You could add some brown sugar as well.

Mash it and bake it in a pie.

Make sweet potato pancakes.
