3. There're some nice state parks not too far off.
Wekiva Springs is one that I know. Been years though, so it might not be as close as I think.

4. I was going to suggest Wekiva Springs.
Also, about 40 minutes north there is Blue Springs (where the manatees come to stay in the winter) and about an hour north there is De Leon Springs, with the old Sugar Mill Pancake House where you can make all you can eat pancakes at the table.

5. This would really be the best time to go to Disneyland.
All the kids are back in school, so there aren't any crowds.

8. Slight problem: Disneyland is in Anaheim.
Disney World is in Orlando (actually, Kissimmee, next door). :P
