3. I have a copy somewhere of all different types of pesto recipes
I haven't tried any yet - there were a lot of different herbs, and also different nuts...


Pesto is so wonderful!

6. We have 16 well developed basil plants right now!
Two of them are lemon and one lime (try it if you haven't), but the other 13 are all pesto worthy - two are purple.

4. Walnuts need to be blanched and peeled before using them in pesto.
Otherwise they're just too aggressively flavored and compete with the other ingredients.
Chopped macadamia nuts are a decent substitute.

Sounds 'ono! (delicious) You'd think, with mac nut-encrusted whatever on seemingly every menu here except Jack In The Box, someone would've tried that, wouldn't you? :shrug:

edit: The coup de grace would be to make it with locally-grown basil from Wai'anae on O'ahu's Leeward Coast!

11. They have that same fatty richness as pine nuts.
Most other nuts are either sweet or too aggressive IMHO. Mac nuts work!
