1. My dear Kali!
We are!

Since we had Thanksgiving at our daughter's house, we didn't have any leftovers...

So, tonight, I'm roasting a giant turkey breast with stuffing under it!

I also bought mashed potatoes, and gravy!

We will have leftovers too...which we love!

2. We are. Had reheated stuff tonight. Pretty much finished off the
sides and tomorrow we're having turkey pot pie. I made the stock last night after we got the meat off the bird.

It was a HUGH bird and we've been eating off it since Thursday. :bouncee:

4. I didn't have a Thanksgiving this year, so have no leftovers...
I missed cooking and I miss the leftovers... So does my pup...:-(

I finally pried my mother's stuffing recipe out of her, made it last year. That's what I missed the most...:-(

5. I made 3 things this weekend
After making stock from the carcass I made 2 different soups and after having MORE leftover turkey I made a pie with pears and blue cheese.

6. I only ate it on Thanksgiving.
My T-Day was far from splendid so I boycotted the leftovers. I ate a cheeseburger the next day for lunch.

10. eh we cheat and use canned green chili enchilada sauce
the meat is from what I picked off the bones after boiling for a couple hours. Mix a lb or so of meat scraps with 28 oz can of sauce, heat up and put a couple spoons in a flour tortilla, wrap well and fry until crispy in a bit of oil. Dump some cheese on it while hot, if desired and eat! We had some left over pinto beans for a side and some chopped onions.

I have a whole list of leftover dishes I try to get to before we run out of turkey. First is the left over dinner itself, then a couple styles of sandwiches, soup, various Mexican antijitos, casseroles and I never make it to the croquets, darn it!:rofl:

Good thing I have 5 more turkeys in the freezer!

8. Me.
I made an asparagus/sage sausage quiche from the leftover veggie and the sage sausage that didn't go into the stuffing....it was FABULOUS, so I'm told...(it was fabulous, imo....regardless of what "others" say! lol )

It's been turkey a la king and open-faced hot turkey sandwiches all weekend.

I've frozen the turkey carcass (for soup)....b/c I just didn't have it in me to make it this weekend. I also have frozen 1/2 of the "turkey shrapnel" that can/will be used in other dishes (a la king, again!?!) ..... turkey salad, etcetera.....

9. I made a very simple delicious dish Saturday night
Turkey chunks, dark and light
a can of drained black beans
a bunch of green onions, sliced thin
a can of black olives, drained
half a jar of salsa
lots of jack cheese

layered all that stuff into a baking dish

baked until all melty/bubbly

served with sliced avocado and sour cream

It was delicious and a break from the Thanksgiving tastes. Tonight it was back to the hot dinner sandwiches.

15. Fresh spring rolls here
Turkey, bean sprouts, Thai basil, mint, cucumbers, and lettuce wrapped in rice paper. Coriander/lime/serrano sauce for dipping.

That's it though. The rest of the turkey is in the freezer.
