Boy is that stuff good! Too bad she and my brother got divorced this year. :( Maybe I'll have to try to recreate it myself.

11. Not a side dish, but we always have appetizers before...
and my personal favorite is oozy goozy cheese (basically a wheel of gouda baked in pillsbury crescent rolls and served on sliced apples)

17. I was going to say that too. I posted this recipe in another thread:
* 2 lb white pearl onions, left unpeeled
* 1 1/4 teaspoons salt
* 3 tablespoons unsalted butter
* 1 tablespoon all-purpose flour
* 1 cup milk or cream
* 1/4 teaspoon black pepper
* 1/4 teaspoon freshly grated nutmeg (optional)

Put onions and 1 teaspoon salt in same pot and add fresh water to cover by 1 inch. Bring to a boil, then reduce heat and simmer, covered, until onions are tender, about 20 minutes. Drain well in colander, let cool, and pop onions out of their skins. Discard skins.

Melt 1 tablespoon butter in a 1- to 2-quart heavy saucepan over moderately low heat, then add flour and cook, stirring, 1 minute. Add milk or cream in a stream, whisking, and bring to a simmer, whisking. Simmer sauce, stirring occasionally, 2 minutes. Stir in pepper, nutmeg (if desired), and remaining 1/4 teaspoon salt and pour sauce over onions.

The parmesan and paprika sound like good additions.

My mom and I find that they work better with the cream sauce.

My aunt disagrees. She prefers to use pearl onions and goes very light on the paprika.

35. We make this too.
We sprinkle breadcrumbs over the top and then bake it though. I wonder if mixing the breadcrumbs with Parmesan would be extra good. Have to check with the guy about this, he loves traditions.

39. Oh my goodness, yes.
There are only two kinds of food: that which can improved by adding onions, and that which benefits from chocolate.

Creamed onions only needs more onions.

19. Everyone LOVES my Green Bean Dish
8-10 slices of bacon- fried and crispy
5-6 cans of green beans
medium onion.
Add pepper to taste. NO salt. You don't need the additional salt because of the bacon.

fry bacon up. Keep about 1/4 to 1/2 of grease.
drain maybe 3 cans of the beans.
Fry chopped up onion in the bacon grease.

In a crock put put the beans and liquid from 2 of the bean cans. Crunch up the bacon and put in the bacon grease and sauteed onions. Cook on high...reduce to low. Cook until beans are all cooked down etc.

Every loves this. It is just wonderful

21. That's how we make our "normal" green beans.
We do something similar for cabbage at Thanksgiving, though--salt pork chopped up, fried, and then cabbage fried in with it. Yum.

I saw something on TV about shredded brussel spouts with a lemon sauce but I can't find it. RATS!!!

27. Squash Casserole. I have to make this for my daughter
It is really easy and very good.


thinly slice 2 pounds of summer squash
and a small onion
crush a couple cloves of garlic
combine in a saucepan w/ just enough water to cover and bring to boil, then simmer about 10 minutes. Drain and mash with potato masher.

Grease a 3 quart casserole.

combine the squash with 2 cups shredded cheddar cheese, 1/2 stick of butter,
1/4 cup of milk and crushed saltines (about half a stack)

Pour all into the casserole, bake @ 350 until puffed and golden.

Cornbread Casserole

* 1 (15 ounce) can whole kernel corn, drained and 1/2 liquid reserved
* 1 (14.75 ounce) can cream-style corn
* 2 eggs
* 1 (8 ounce) package dry corn bread mix
* 1 cup sour cream
* 8 ounces Cheddar cheese, shredded

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking pan.
2. In a large mixing bowl, combine corn, reserved liquid, eggs, corn bread mix and sour cream; stir until blended. Pour batter into prepared pan; sprinkle with cheese.
3. Bake in preheated oven for 30 minutes, until golden brown.

I like more cheese so I double the amount and mix half into the recipe and sprinkle half on top.
