35. Gotta be fried chicken, specifically HOT SPICY fried Chicken as in Popeye's
after that, it's all relative.

Fried delicacies that I love and will occasionally order in a restaurant include:

fried potatoes...of course
fried dill pickles
fried okra
fried green tomatoes
fried squash or zucchini
fried cauliflower
fried eggplant
those jalapeno poppers
fried shrimp
fried scallops
fried fish.

Oh yeah, I did grow up in the South and yes we will fry almost anything.

a big bucket of spicy chicken skin.........yummy and a couple of biscuits and maybe a side of red beans and rice. But that crispy, crunchy, tangy hot skin is the best.

I don't think it could be accurately replicated without deep frying. Jeez now you've done it......I'll have to drive Troy(nearest Popeys) to get some of that chicken.

but fried eggplant strips come a close second. Actually fried eggplant might come in first because nothing is grosser than a poorly fried potato whereas fried eggplant is always good even if you reheat it in the microwave.

Thankfully, a local bar has some of the best I have ever tasted....however ( don't know your feelings on this one ) they serve it with malt vinegar, which I happen to love dearly.

28. It's easy - my Dad taught me.
The long skinny Japanese or Chinese type eggplants work best. Peel and slice into 1/2 inch slices. Sprinkle heavily with salt and let them sit for 20 minutes. Then rinse off the salt and pat dry. Dip in beaten egg, then in seasoned breadcrumbs. Fry quickly in hot oil until golden brown, then drain on paper towels. Sprinkle with "Spike" seasoning or any seasoned salt. Serve with a ranch dip or blue cheese dip.

31. Ahh..now that sounds right. Thank you for the instructions.
My Mom used to fry em up but she left out the salt step which draws out the moisture, no wonder hers were well..(sorry Mom!) soggy. But darn the flavor was good.

I haven't had any in probably 35 years or more. That's a must have this weekend.

34. You're welcome. And my Dad never did the salt step either.
I learned that from some cooking show. The salt draws out the moisture so the eggplant fries better and is less soggy. They claimed it makes the eggplant absorb less oil too. It's not really necessary to do the salt step. I think the key is to fry them quickly; when I do it they are only in the oil for about 1 minute on each side. And another key is to sprinkle them with seasoning salt, even if you are going to use a dip. Enjoy!

With a buttermilk wet dredge and properly seasoned flour, fried in melted lard or shortening (not vegetable oil.)

51. Fried flounder & onion rings from The White Cap in Ipswich, Massachusetts...
...which I haven't had since I moved to California many years ago. The White Cap may possibly be the single greatest restauarant on the planet. It's family owned, and they catch some of their own fish and buy the rest. "Cleanest" fried food I've ever seen. They must change the oil frequently and keep it at the perfect temperature.
