Poll question: tortilla poll

I love corn tortillas, but for a proper burro/burrito you do need flour.
"Wraps" bug the hell out of me. Just make a fucking sandwich with bread, huh? And putting baloney or peanut butter on tortillas? :puke:

1. Now I want Mexican food. I love Flour Tortillas
but I also love corn tortillas. Depends on the dish.

Must have flour ones for fajitas, quesadillas and such.
Warm corn tortillas are wonderful in salsa and reduce the point count on that part of the meal significantly
Enchiladas require corn tortillas

3. Something I learned from my Grandma
You can take corn tortillas and some oil and fry two in a pan with cheese between them. It turns out like a mexican version of a grilled cheese, but with like 2x the awesome. And yes, I know you can do similar w/ flour and make quesedillas, but the crispiness of the fried corn tortillas is like omgawesome.

Not because of how they taste, but because they don't crisp up very well when I use them to make quesadillas.

5. when you say quesadilla do you mean the flat crisp pizza-like snack?

because real quesadillas are soft. You can, however make crisp corn tortilla cheese things in the oven.

lay out a few thin corn tortillas on a cookie sheet and put a small pile of grated cheese in the middle, and a sprinkle of salt if inclined. Bake at 400 for ten minutes or so (until crispy - heh) - good with a fresh pot of beans

You can also pre-fry them crisp then melt cheese on top like nachos

note this doesn't work very well with the thicker tortillas de mesa - those are best plain as picker-uppers for food or warmed in the micro (or a comal) with butter. :9

7. I voted for the wraps
just to be ornery.

Each dish is best with the proper wrapper. I don't think of "wraps" as tortillas. In fact, around here they're often lavash.

9. I voted flour...
...because of the burrito factor.

But my dad (alternatively "El Viejo" or "El Californio") is old school. Almost exclusively corn tortillas. Which is just as well, because he stands over them while he's heating them up. For some reason, he thinks that it's okay to walk away while he's got a flour tortilla on the fire!

When we go grocery shopping, we always get a package of the just made, still warm corn tortillas and munch on them as we shop.
