then you need really good sausage.

Bob Evans and Jones' aren't stacking up too well lately; I don't know why, but they just aren't as good as they once were.

Anyone have a good source? Hell, I've seen a couple of good recipes out there; if I can't find it, I'll just make my own.

2. I'll second going to your local butcher.
Of all the sausages that my local grocer carries, only one doesn't have MSG in it.

No, really. I forgot (how could I?) that there's a Pork Store in my town! I rarely have entered it, but I've passed it by car literally a thousand times.

:banghead:

I hope they're open today. :D I hope they make breakfast sausage.

8. Jimmy Dean Original
It makes the absolute best sausage gravy of all the brands I've ever used--hands down. All the others are either way too greasy, not greasy enough, or the flavor isn't strong enough. Jimmy Dean also makes *terrific* sausage balls. We rarely buy sausage, but when we do, we always get Jimmy Dean.

9. Oh--and Jimmy Dean also has a terrific reduced-fat variety
It's not good for gravy because good gravy requires a certain amount of grease, but if you just want sausage for breakfast, or dirty rice, or some other dish--it's teh awesome. :hi:

17. I must agree.
Jimmy Dean makes the best sausage short of a butcher. I enjoy quite a few of their products.

10. I've been cooking for 35 years and I've been a damned good cook for
Edited on Mon Dec-31-07 11:56 AM by Feles Mala
more than 20, having learned the secrets from both of my grandmothers, and in all these years of country cooking, I never thought I would say this. This mix CANNOT be beaten:

My days of slaving over gravy are behind me. My sister told me about this stuff and, naturally, at first I was skeptical. Then I tried it this Christmas morning. THe pressure was on because the entire family was there for breakfast. Lo and behold! it's the greatest thing since the microwave. You just boil water, mix the mix with cold water and pour it in the bowling water. It instantly turns into perfect gravy. No lumps, to scorching, no over seasoning. It's perfect right down to the chunks of cracked (never ground) pepper. Cook to desired consistency and add sausage. It's miraculous. (This is purely an unsolicited testimonial.)

16. Neto Sausage Company
I make a trip over there once every couple of weeks...about 2 miles from my home. Twice a week they fire up the grills in the parking lot. You can get fresh-made, fully-loaded chicken, sausage or steak sandwiches on French rolls with chips and a drink for about 5 bucks. They sell online, too:

http://www.netosausage.com/

Look for:

"Country Sausage - A lean ground sausage that’s perfect with eggs, biscuits and gravy or add it to make your dressing extra special."

on the "Products" page (http://www.netosausage.com/html/products.html).

20. Lots of great suggestions here. Thanks to all, but I went local (always a good choice

environmentally, and for local economy).

As I posted upthread, I'd *forgotten*! there's a Pork Store in the area...one I've only been into ONCE in 17 years. Go figure.

I dropped in yesterday afternoon, asked if they made breakfast sausage. Guy said, 'yes, how much do you want?' I said, 'One pound'.

And he went in the back and MADE a pound, fresh, on the spot. Wow. $7.50 per pound. A little while ago, I stripped the sausage out of the links to fry it up for gravy. Now...

I'm sitting here eating some of the finest biscuits and gravy I've ever made. Serious pork content in this sausage; not too spicy, but that's easily fixed in the cooking. :D

Still, I'm going to check into some of those online stores to see what's out there in the way of good sausage.

BTW...I recommend Ozark Mountain Smokehouse for bacons of all descriptions. There's some bacon fat from their Smoked Bacon in my gravy, and I'll be using their Peppered Bacon to make Black-Eyed Peas later today. :hi:
