I'm trying to think of something fun to do with asparagus. Ideas?
So, for Christmas dinner, we decided that we were going to bag the sit down traditional dinner and just eat appetizers and fun stuff. So far I think we're going to have:

Brie en croute
Pate
Wild rice salad
Figs with goat cheese wrapped in prosciutto
Brussels sprout salad
Stuffed jalapenos

I was trying to think of something fun and snackworthy to do with asparagus. Anyone got any good ideas? :hi:

1. You could grill it.
It'll be warm enough. :D

Or, just use a grill pan. My mom also covers asparagus with a peppercorn ranch dressing. It sounds odd, but it's good.

2. I like it grilled
just put a little olive oil on it, and slap it on the grill for a couple minutes. I've never done it myself, but I've eaten it that way before and it's been good

3. Once went to a wedding where they had...
asparagus stalks wrapped in ham and sprinkled with lemon juice. I'm a vegetarian so that doesn't appeal to me, but it went over quite well and is easy to prepare. I personally love asparagus stalks basted in olive oil and salt and pepper grilled out on a gas or charcoal grill, but I live in Florida so it might not be practical if you are somewhere where it's 20 below.

By the way, no matter how it is cooked, asparagus is finger food. Ask Miss Manners, Emily Post or Amy Vanderbilt.

4. i roast it with kosher salt and cracked black pepper and the when it's fork tender
i put feta cheese and bacon on it, you need to use some olive spray first and the salt and pepper it.

10. It softens up the Asparagus fibers and gives it a really nice
citrus aftertaste. It's a very mild and gentle citrus taste. Though you can use lemon juice if you want a stronger citrus taste too. :)

16. I had an appetizer years ago...
...that was cooked asparagus spears wrapped in crustless good white bread slices cut to fit....but what was spread on the bread before rolling? I think it was a lemony cream cheese, spread real thin. It was delicious.

18. Simple roasted asparagus
Put a little olive oil, salt and pepper in a plastic bag. Add the asparagus. Shake so the asparagus is completely coated.

Place in foil-lined baking pan.

Bake 20 minutes at 400 degrees F.

38. One of my favorite salads -- BS, mandarin orange segments, pecans.
I believe the sprouts are just boiled "in the usual way", with a *little* butter added for mellower flavor. Pecans are added last.

Also, BS, cherry tomatoes, and larger pearl onions. Tomatoes are not cooked, and onions can be well cooked or nearly raw as you like. Even comes close to Xmas colors! (Haven't had the chance to try this with plum tomatoes.)

Toss out lobster, and serve asparagus as finger food.

And I'm sure they used the lobster for something, even if it didn't show up as part of the competition menu. Chefs don't waste food.

take lox (thinly sliced smoked salmon) spread cream cheese on the salmon, roll up a chilled blanched asparagus spear in it then slice the roll on an angle to bite size pieces

35. Its really good if you just drizzle it with
some olive oil and lemon, bake it in the oven at around 350 till it's done to however you like it (I like mine very crisp, so around 5 mins), and then crumble some feta on top when it comes out.

Beans, like fresh green beans, are also good that way done similarly. Steamed, then mix together about 4tbs olive oil, 1/2 tbs lemon juice, and 1 tsp oregano, mix with beans, top with crumbled feta.... yum...

40. Got a wok?
Soak whole asparagus spears in cold water for an hour (two if extra big). Blot dry, rub with salt, let stand for 10 min., then blot dry again. Cut into 1" segments and stir fry in a couple of Tb of oil, plus 1 tsp of sesame oil (spicy!). IIRC, they turn dark green when they are just about al dente.

This is more of a filling veggie dish than an appetizer, though.
