Best regional BBQ style?

Okay, moment of truth here folks. This may cause some heads to roll, because people get very loyal and defensive about their style of BBQ.

I'm wondering what, in your opinion, is your favorite regional barbeque style? Sauce, flavoring, meat, etc.

I'm a sucker for Carolina--North (straight vinegar based) or South (mustard vinegar based), either/or. Don't get me wrong. I have nothing against what is considered traditional barbeque sauce by most (i.e. the Kraft/Sweet Baby Rays dark brown stuff). But in the end, it just comes off like smoky ketchup to me, not very exciting. Carolina style has that extra tang and spice that I'm seeking, and it isn't too thick.

Although I also have a fondness for KC style (which is actually an offshoot of Texas style). :9

Anything else is fit only for barbarians, with the possible exception of those shredded pork sammiches with the cole slaw on 'em up in NC.

32. I like the NC sweet sauce....but it's not even like eating the same kind of food at all!

I don't like "sweet" barbeque sauce much at all. I prefer the mustard/vinegar combo to just staight vinegar, but I like both *much* better than any other type. Babybacks brushed and grilled with tangy Carolina barbeque sauce...mmmmm. :drool:

4. I made some baby backs with Carolina mustard sauce a few months ago...
Made the sauce totally from scratch.

Best meal I've ever personally cooked. Hand down. It was incredible. I improvised on the sauce, taking from a couple of recipies I pulled off the internet. And the ribs were tender to the bone. Damn I was good that night.

6. dry rub, nothing sweet
I can't stand most bbq sauces. Typically at restaurants I'll mix some steak sauce with Franks or Cholula if available, then put it over my fries and dip my steak in it.

There was a 'soul food' edition of Ramsay's Kitchen Disasters (Brit version) that once given a kick in the ass, was hugely successful.

8. The best barbeque I have ever had was at Maurice's (Piggy Park)
in Columbia, South Carolina. Unfortunately, his politics are a bit twisted so we don't go there anymore. But it was really, really good, mustard-based barbeque.

I don't like the super sweet stuff, either. If it's not mustard, then dry-rub spicy bbq.

Of course, this was before I quit eating meat. But I break down about once a year and have bbq'd chicken.

In other words, we can continue to feel superior to KC style. :rof: :hi:

KC style grew out of the Texas style barbecue that made its way up to that part of the country during cattle drives. That may be my single most favorite bit of barbecue trivia.

36. When I was a wee lad, before we moved up to Illinois
My dad and I used to go to a bbq place by my grade school on Friday, and split an order or ribs and sweet potato fries. All childhood memories aside, it's still my favorite variety of barbecue.
