Corn Casserole
Recipe courtesy Paula Deen
Show: Paula's Home Cooking
Episode: Country Cooking - Southern Sides
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

12. You're not from the south are you?
I grew up with the food she makes, and it is wonderful and delicious. It doesn't alway SOUND that way, what with the lard and butter she puts in it, but it tastes HEAVENLY. Are you one of those people who have never had biscuits and Gravy or Chicken Fried Steak?

38. Old fashioned biscuits used to be made with lard.
Now they are usually made with shortening, butter or in some cases oil.

18. I doubt that's an original recipe by her, it's been around for years
I have an older fundraiser cookbook, one of those where a bunch of people get together and submit favorite recipes and then send it off to be published, copyright 1982. It's in there and it probably actually originated with Jiffy. If anything, Paul cut out the eggs that go into it. Two of them.

Ina Garten. That woman also likes her sour cream, butter, bags of powdered sugar, cream cheese, bleu cheese, etc.

28. A cook friend of mine gave me some valuable advice. She said
any recipe will taste good if you start with a pound of butter, a pint of heavy cream or 8 ounces of sour cream, etc. You could make cow pies taste good with all that stuff. The trick to good cooking is to produce tasty dishes that don't require so much fat, but taste just as good. It can be done.

The scene shows a theater marquee that says:

41. I remember being maybe ten or eleven
and watching in complete bewilderment as she draped strands of molten sugar over a broomstick. To this day I have no idea what she was making, but the image has stuck with me.

She let me know of the existence of Jacques Pepin, too, which would be enough by itself to rate at least a kiss...

43. Yes, I'll never forget the "How To Cut Up A Chicken" episode...
...the first one I saw. Now I know that the way to cut up a chicken is to whirl it around in the air by the legs and slam it on the cutting board.

She was the first person I know of who made cooking shows fun to watch.
