I'm hoping the salad bar has a bunch of yummy stuff on it today
maybe some cold asian noodle salad... or some grilled salmon.... or some roasted beet salad w/ oranges....


what are you thinking of for lunch?

Spinach pizza and green salad with artichoke hearts. I'm staaaaaaaaaaaaaarvin'. :cry:

2. I made a yummy spinach pizza on Saturday night
sauteed the spinach w/ mushrooms and onions before putting it on the pizza. I had leftover spinach stuff too, so I used it in an omelet the next morning.

I lovelovelove spinach, and would love your spinach pizza recipe if you'd care to share it. Ours is frozen; I've been working since 5:30 a.m. and I just finished up for the day at about 5:30. :yoiks:

5. well, it wasn't JUST spinach
I used small whole wheat pitas for crust.

In a little olive oil, I sauteed a clove of garlic (thinly sliced), 1/2 onion, 5 or 6 sliced crimini mushrooms, and about a cup of frozen chopped spinach.

I opened a can of pizza sauce (yeah, I cheated all over the place w/ this one) topped the 6 pitas w/ about 2 tbsp. of sauce each. (Sometimes I skip the pizza sauce entirely and just brush the pitas w/ garlic infused olive oil.)

I had different people w/ different tastes. My own pizza had just this veggie mixture, and very thin slices of provolone cheese.

The others had some combination of pepperoni, leftover meatballs, the veggie mixture, and either provolone or shredded mozzarella.

7. Fooey.
Here in "Das Hinterlanden" their idea of salad is a wedge of iceberg smothered in "Hidden Valley".

I want mixed spring greens, grape tomatoes (from my garden), yellow banana pepper rings (Pickled, of course), baby porobello slices, mung bean sprouts, mandarin orange sections, shredded carrot, red onion (THIN sliced), slivered smoked almonds, crumbled bleu cheese, cracked black pepper, and a dressing made of equal parts roasted sesame oil, rice wine vinegar, and peach chutney.

9. that sounds yummy
for sure on the salad bar here there will be:

mixed spring greens
cherry tomatoes
pepperoncini
mushroom slices
shredded carrot
red onion
sunflower seeds
some kind of cheese (feta, cheddar, pepper-jack, or bleu)
and all kinds of dressings

(there is also usually eggs, grilled chicken, cottage cheese, olives, assorted fruit (strawberries, grapes, melon) and then the other side of the salad bar will have an assortment of fun stuff like hummus, pasta salad, antipasti, roasted veggies of some sort, etc.)

11. Double Fooey.
I am MILES from the nearest Salad Bar, and it's at a "Big Boy" so it isn't anything to write home about.

I will have to settle for WENDY'S salad. A big time come down.
