Jeffy's Smashing Vegetarian Beef Stroganoff...
Okay, so after hamming it up in the Religious section over the last few days I decided to ham it up in the Lounge with a recipe. A little background...

I'm a vegetarian, or to be specific, a lacto-ovo vegetarian. Basically I eat eggs and milk products, no meat. If it requires killing the animal then it's out. I have been a vegetarian for about 3 years now, and love it. The only guilt I have is in the packaging, and the meat based products I feed the pets.

My diet has caused me to go from 2 meals of fast food a day, (I'm a rush hour cubicle man by trade), to cooking nearly everything from scratch, every day. This has caused me to experiment a great deal, and I hope, become a much better cook. I'll leave that decision up to you.

So, to begin a regular series of threads on my experiments, here's the current favorite making the rounds at home. Feel free to try, critique, poke fun at, modify, (all recipes here by me are licensed under the GNU), etc. Behold, Beef Stroganoff!

1 box Boca Ground Crumbles
1 package extra wide egg noodles
1 white onion
1 small tin of mushrooms, (pieces and stems),
or as many fresh mushrooms as you like, sliced
1 cup water
1 cup milk
1 cup sour cream
2 capfulls of vegetable oil
1 teaspoon of olive oil
a bit of fresh garlic minced,
or 1 teaspoon of bottled minced garlic
1 package McCormick's Beef Stroganoff mix, (I checked the ingredients for you, there's no beef)

You will need as spices:

Minced onions
Garlic powder
Onion powder
1/4 cup Parmesan cheese
Iodized salt
Ground black pepper
Minced chives
Basil
Oregano
Onion powder

Recommended cookware:

1 large pot
1 medium pot
1 pasta strainer
1 long wooden spoon
1 medium wooden spoon
1 measuring cup
1 bottle of red wine, (I recommend a good Cab), to liven things up
A couple of tea/tablespoons
A muzzle for my hungry dog that just ate, but still wants mine...

First, fill one large pot half-way with water.
Add salt to decrease time to boil.
Add 1 teaspoon of olive oil.
Add 1 tsp ground black pepper.
Add 1 tsp garlic powder.
Add 1 tsp minced onions.
Add 1 tsp basil.
Add 1 tsp oregano.
Bring evil witch concoction to boil.

In medium pot, add 2 (or more) capfulls of vegetable oil.
Dice one white onion and place aside while oil heats.
Dice fresh garlic or not. You can add bottled garlic when you add onion.
When oil is hot, you guessed it, add onion and garlic.
Add 1 box Boca Crumbles.
Cook until Crumbles no longer frozen, and white onions become transparent.
Add a bit of salt.
Add one dash of onion powder for luck.
Add garlic powder to your own tastes.
Add ground pepper to your own spicy tastes, you naughty person...

Is the water boiling in pot number one?
"Make it so, Number One", add the egg noodles.
Keep them stirred, not shaken, now.

Pot number two, (no number two jokes here folks)...
Add 1 cup water.
Add McCormick Beef Stroganoff Mix.
Add 1 cup milk.
If you are using tinned mushrooms, open the can and drain the juices into the pot.
If you are using fresh sliced mushrooms, just imagine you did the last step.
Add 1 tsp Oregano.
Add 1 tsp Basil.
Oh, geez, I almost forgot, add the mushrooms!
When the wicked potion in pot number two begins to boil, add 1/4 cup Parmesan cheese.
Stir. Really. Keep it stirred. It will burn the bottom of the pot, and that's murder to clean.
(Tip: If you have a boyfriend, girlfriend, wife, husband, significant other, life partner, whatever, tell them that since you are cooking they have to do the dishes before they can eat. This will help greatly if you screw up the last step.)

Are the noodles done? Strain them. Rinse in cold water. KEEP THEM MOIST!

Is pot number two the consistency of hamburger helper?
Add 1 cup sour cream.

Enjoy.

Bonus Challenge:

Create a unique bread side to go with it! Post your breads here--breads of the world unite, (no meat breads, please).

Extra Special Bonus Points:

You correctly guess which size wooden spoon goes with which size pot.

Extra-Extra Gonzo Resigned Today Bonus Points:

I had that bottle of wine mentioned above while I cooked this tonite so you get points if you figure out what ingredient that I mentioned above but forgot to include was!

1. sounds great!
And I think you forgot the chives.

But that's okay 'cause I'm not really crazy about chives, myself.

There's a veggie section, too, btw - we have a sticky for recipes.

Just today I was wishing for some "new" recipes. We all get stuck in a rut sometimes.

Welcome to DU, btw. :hi:

2. D'oh!
I did forget the chives! Nice catch. They go in pot number two with the basil and oregano.

I didn't see the veggie section. How much trouble am I in?

4. No trouble.
People tend to either ignore or harass noobs.

Vegetarian posts - in here - usually triggers mass warfare, general havoc, and wholesale derision - on the part of some. (Some even mean it, unfortunately. :( ) You shouldn't take it personally, though.

I think, though I'm not sure, you have to be a contributing member to post in (or maybe even access?) the other forums.

5. Hmmm...
That may explain why I didn't see it when I looked.

Vegetarians harassed? Evil!

6. Oooohhhhh...
It is, trust me. And, the bottle of wine enhances the dish, if you know what I mean.

It also enhances that partner/mate doing the dishes mood as well.

8. Well...
If you want to keep it easy, limit the ingredients to the bottle of wine. Also add a dash of someone doing the dishes while you watch tv. None of the crap reality stuff though.

No one has harassed this vegetarian. :) Well, at least not about being vegetarian...Oh wait, that's not entirely true...Oh well, must not have been important, I've forgotten it already.

13. Welcome to DU

The VVAR group is here:
http://www.democraticunderground.com/discuss/duboard.php?az=show_topics&forum=231

You can read posts there, but you can't post unless you contribute to DU.

PS that group is also known occasionally as the tofu ghetto, but I don't know why.
