How do *you* make Chicken Salad?
We're making some tonight...What do you put in yours? :bounce:

I'm also making Egg Salad, if I can keep my motivation up, hehe. :P

i'm a firm beLiever in fruit in chicken saLad. we don't have grapes, but we do have dried cranberries, and appLes.

just an fyi for any suggestions. ;)

4. A lot of people put fruit in theirs. I do not like fruit in mine.
But if I had to pick a fruit to put in it, I would go with apples.

My SO makes it with citrus juice, cilantro, minced red onion, pepper and just enough mayo to hold it together. Some apple would be good in his version but he doesn't like fruit in chicken salad.

mayo, celery, chopped grapes, cranberries, pecans and a touch of honey.

Delicious!

If I make a curried one, I use white meat chicken, celery, curry, mayo and chutney.

3. I put a whole cooked chicken in the blender.
Throw in some celery, onion, and Miracle Whip.
Handful of cornflakes.

Grind it fine and you hardly notice the bone chips.

6. I cut up chicken breast very fine.
Mayo, mustard, chopped bread and butter pickles and some of the pickle juice, diced onion, boiled egg, salt and pepper! And mmm mmm good!!


No fruit or nuts in mine!! Yuck!

9. I make two kinds. Regular and curry.
Have been totally hooked on curried chicken salad lately: cube the chicken meat, and chop up celery, onion and walnuts. Halve a bunch of red seedless grapes.

For the dressing, take mayo, good curry powder, lemon juice and a little honey. Whisk together and toss with everything you've chopped up.

Very, very yummy.

I buy one of those whole roasted chickens at the grocery store. I only use the white breast meat, and I save the rest or give it away to a neighbor.

I chop up 1/2 onion, very finely, and place it between paper towels to absorb the excess moisture
I chop up a small amount of celery (or if I don't have any, I use a little celery seed to get the flavor)
I put in about 2 tablespoons of capers (or if I don't have any, 2 tb of finely chopped green olives

I mix those 3 together in a bowl. I then put in a good large spoonful of mayonnaise (Best Foods aka Hellman's)
I put in a tiny amount of brown mustard (Gulden's)
I sometimes add a dash of curry powder, but this is not required

I stir all the above together. I grate the peel from 1 lime, and add the grated peel to the mixture, and squeeze a small amount of lime juice, not more than 1 teaspoon. I take 1 small garlic clove and squeeze it through a garlic press into the mixture. Just a little garlic.
I mix everything together well.

I take the white breast meat off the chicken and chop it up finely, then add it to the above mixture. If there is not enough dressing, I add a little more mayonnaise, but usually the dressing is enough.

I put it into the refrigerator in a covered bowl and let it chill for at least 2 to 4 hours, to let the flavors blend.

17. Pretty Basic Actually
Cooked and finely chopped chicken breast
Chopped celery
Chopped shallots
Finely minced fresh tarragon (dried is okay if fresh is unavailable)
Mayo
Freshly ground black pepper

Combine all ingredients and cover. Place in the fridge for a couple of hours.

Serve on toasted whole wheat or rye bread.

I like grapes in chicken salad every once in a while too.

No eggs, miracle whip, cornflakes or pickles of any kind in my chicken salad. All of these ingredients hide the taste of the chicken.

What is really good, is my left over charcoal-grilled chicken in the salad.

21. Tarragon.....
.....is a member of the anise family. It tastes somewhat like licorice, but not as strong. I find it indispensable when cooking with chicken. It really compliments poultry nicely. I remember reading a food critic years ago who said "I would eat human flesh if you added enough tarragon".

32. Pulled, slow-roasted chicken
Chunks of celery and red onion, Best Foods Mayonnaise (Hellman's on the East Coast), a bit of Grey Poupon Mustard, a dash of Sriracha, minced garlic and poppy seeds. Then I put it on a hard roll with a slice of provolone and put it in the broiler until the cheese melts.

36. Mayo, lemon juice, shredded chicken that "I" cooked, toasted pecans
and grapes. Cut in half. Salt and pepper (ususally kinda heavy handed on the pepper). Cut a fresh kaiser roll in half, put a piece of "soft" lettuce (like butter lettuce) on the bottom half, stack salad on top. Yummy.

38. Tarragon Chicken Salad from the Silver Palatte
From the cookbook:

After making this salad fresh every day for four years and never tiring of the taste, we think it’s safe to say that this one really wears well. It is dressy enough to serve as a main course; delicious enough to have in a sandwich; and so simple to assemble that you will make it often. For a different taste, substitute black walnuts.

boneless whole chicken breasts, about 3 pounds
1 cup crème fraiche or heavy cream
1/2 cup dairy sour cream
1/2 cup mayonnaise
2 celery ribs, cut into 1-inch-long pencil strips
1/2 cup shelled walnuts
1 tablespoon crumbled dried tarragon
salt and freshly ground black pepper, to taste

1. Arrange chicken breasts in a single layer in a large jelly-roll pan. Spread evenly with crème fraiche and bake in a
preheated 350F oven for 20 to 25 minutes, or until done to your taste. Remove from oven and cool.

2. Shred meat into bite-size pieces and transfer to a bowl.

3. Whisk sour cream and mayonnaise together in a small bowl and pour over chicken mixture.

4. Add. celery, walnuts, tarragon, salt and pepper to taste, and toss well.

5. Refrigerate, covered, for at least 4 hours. Taste and correct seasoning before serving.

4 to 6 portions

43. Here is my family's recipe:
1 can of Swanson white meat chicken in water
1 egg, boiled and chopped
1 onion chopped (optional)
2 TBSP of diced pickles
1 TBSP of Duke's Mayonaisse
and
some saltine crackers to go with the chicken salad

mix it up and serve on the saltines or as a sandwich. Yummy. :P
