What's on your menu for Easter dinner?
Mine:

Barbequed steak and ribs.
Baked beans.
Broccoli.
Salad.

Easter this year is also the 1st Annual SeattleGirl Barbeque Day!!! :bounce:

9. Here you go!
Lemon Cream Cheese Pie
Serves 8

Crust:
1 2/3 Cup graham cracker crumbs, finely crushed
1/4 Cup sugar
1/3 Cup butter or margarine, softened

Filling:
8 oz cream cheese
2 tbsp butter
1/2 c sugar
1 egg
2 tbsp flour
2/3 c milk
1/4 c lemon juice
2 tbsp grated lemon peel (optional)

Lemon Topping:
1-1/2 tablespoons corn starch
1 cup water
1 tablespoon butter
1 cup sugar
1 lemon (juice & peel)

Crust:
In plastic bag, finely roll 10-12 graham crackers, or use food processor. Combine crumbs, sugar, and butter. Blend well with fork or pastry blender. Using back of large spoon, press crumb mixture inside 9-inch pie plate to coat bottom and sides evenly.

Filling directions:
In a large bowl, cream the cream cheese and butter. Add sugar and egg yolk. Mix well. Add flour, milk, lemon juice and peel. Pour into graham cracker crust; bake 35 minutes in a 350 degree oven. Chill.

Lemon Topping Directions:
Mix the corn starch in a 1/3 cup of the cold water and bring the rest of the water to the boiling point. Add the moistened corn starch and cook until transparent. Add the butter, sugar, lemon juice and grated rind and set aside to cool.
Beat the lemon mixture well until smooth and place on top of the baked pie.

Refrigerate and serve when cold.

8. I'm smoking a ham right now.
That's why I'm still up. Aaargh. Just got MMjr's Easter basket finished. We'll eat at my Mom's---I know that she's fixing a big pan of dressing. So for certain, ham and dressing are on the menu. I imagine that we'll devil some of the four dozen eggs we decorated tonight.

And probably jelly beans and chocolate bunny for desert. :)

11. MrSG makes an incredible wild rice dressing that is to die for.
We usually have it at Thanksgiving and Christmas, though per her request, he also made it for her wedding dinner.

We have a couple of turkeys in the deep freeze but I think they are sticking with ham this year. Either way, I am going to chow down!!!

the rest of that I could really go for. Rice, pickled banana, fried plantain, salad, mango cake...yum. Certainly beats what I'm having for Easter dinner. (Chili's or Bertucci's or Wood N' Tap...pub-fare-type pseudo-ethnic dreck in any case)

You know, they always talk about how Jews feel left out at Christmas. Quite frankly, I don't envy Christmas at all- way too much work and way way way too much pressure.

But after 5 days of Matzah based everything, with my tummy in knots, I really do envy me some lamb and rolls and peeps.

26. All right - we found a coffee cake recipe to try.
Orange coffee cake with a pecan/brown sugar streusel topping is in the oven now. I've got peaches in orange juice in the freezer getting slushy. When those items are ready, I'm going to scramble eggs with smoked Cheddar cheese and fry some bacon.

31. For many, a traditional Easter dinner includes lamb or ham...
potatoes, asparagus, and hot cross buns or other rolls.

Some people also serve deviled eggs made out of the colored Easter eggs. :)

33. My family never did Easter dinners.. We did do baskets for a few years.
My mom was big on putting large gifts in with our baskets. One year I got an aluminum baseball bat. I was six or seven at the time. I was playing baseball with my sister that Easter morning. She ended up hitting me on the head with the bat.. Yadda, Yadda, hospital, blood, and more blood. Easter was dead in my family after that.

since I hate cream of mushroom soup, ish...and spinach salad and pumpkin muffins and baked spuds and oatmeal/coconut/sunflower seed/chocolate chunk cookies and a little wine and some coffee and some Scrabble and maybe some Cribbage and just hanging out with the family!

41. I was at a friend's for dinner.
We had a fairly traditional dinner of turkey, stuffing, mashed potatoes, caulifower, gravy and a green bean/veggie mix.

For dessert, we had white cake with chocolate toffee sauce and mocha icing.

She even did the gluten-free thang for me with the stuffing and cake. None of her kids noticed. :-)

42. Homemade lasagna from my Sopranos cookbook.
In honor of the kick off to the end of the Sopranos. Spinach, mushrooms, ground spicy italian sausage, and loads of cheese and gravy. It was awesome!!

BTW...The. Best. Sauce. Ever.

I will never buy sauce in a jar or can again. That is all.

43. I did a dinner from the local high-end supermarket
An excellent honey-glazed, spiral-sliced ham
Potatoes Au-Gratin
Green Beans
Potato Salad
Rolls

I also had a nice veggie platter greeting people as they arrived

The rest of the family provided other things like several pounds of shrimp, kielbasa, and cheesecake.

We had a great time.

Spent most of the day flying from St Lucia to Atlanta, checked into hotel late, had a sandwich and a beer at a hole in the wall down the street that's open until 4.

It was good, though.
