What's for dinner .....Tonight?
I just put a great chicken/sour cream dish in the oven!

Later, I will stir fry some zuccini and onions......

And cook some new potatoes!

What are all of you having? Or did you have?

5. it's really good, spicy and the chicken comes out nice and crispy. It has some cayenne
pepper, garlic powder, onion salt and black pepper and bread crumbs, it's in a box near the shake and bake but way better. i get it at Bel-air in the aisle that has rice.

55. hooray for zatarains
We keep a dozen of their boxes on hand in the pantry. I just wish that more of their products were available in the Pacific Northwest. The web site shows LOTS of other stuff.

And Peg? You could try their yellow rice mix, or their caribbean rice that has pineapple and coconut in it, as side dishes. Both are truly delicious.

82. go find the latest Saveur magazine...
...because it contains a recipe for famous and simple chicken pot pie as it is made at a diner in a small town in Massachusetts.

Basically, it's just simmering chicken breasts, then cubing the chicken meat, making gravy with chicken base and the saved broth and flour to thicken, cooking some carrots and peas (you COULD use frozen peas and carrots), putting all that in a baking dish and topping it with a pie crust. Bake. Eat.

Now, if you use Trader Joe's refrigerated pie crust and Better Than Bouillon chicken base (also available at Trader Joe's and many groceries), you will have a heavenly pie. I did it a few months ago, and it was the best chicken pie I ever ate.

it has been a LOOOOOONNNG time since I had a thick fatty steak!!!! Even bought a bottle of red to go with it. mmmmmmmmmmm

oh and maybe a salad and a spud if I feel like it, have some leftover beans and tortillas if I want to go that way, but forgot the green chile's at the store, darn it.

10. Here's what I did
I sauteed mushrooms in butter, added sour cream, milk, garlic, black pepper, and cayenne pepper and some chicken breast chunks that I cooked first. Then I made some linguine and about 5 minutes before it was done I threw in chopped asparagus. Strain the linguine and asparagus and mixed in the sauce and ate it up.

My beloved SO is cooking - his job on weekends - and he's got chicken simmering in some sort of rich tomato based sauce with mushrooms and garlic. We'll have pasta and a salad with it. Yours sounds like something I make - one of my favorites. :9

39. I'm attempting to cut out some calories, and go meatless.
My sweetie is mostly vegetarian, so I'm trying to prepare myself for life with a lot less meat. She doesn't mind if I eat meat, but when the time comes, I'd like for us to eat together as much as possible.

50. Homemade Chili...I make the best in this part of Wisconsin.
...everyone else here are a bunch of Scandinavian wussies whose idea of spice is salt, pepper, butter and Hollandaise sauce. Occasionally you'll get the goofball who will get bold and ask for Tabasco sauce for his four cheese, sausage, ham, and more ham omelet.

As for the chili, it is really easy. Just get yourself a good crock pot, wake up early in the morning, throw in your favorite ingredients and cook the shit out of it. Plan on eating it at dinnertime.

  • Dry pinto beans. Always go for the dry stuff...rinse, clean and cook it with your liquids. Forget the overnight soak, they will be tender when the chili is "done." Canned can be okay, but the sodium used to preserve them also does wonders at storing body fat (which is why fitness freaks tell you to avoid sodium and drink lots of water...helps make brown fat water-soluable).
  • Two fat, fresh, sliced jalapeno peppers.
  • Three or four fat, fresh, sliced habenero peppers.
  • Frozen corn.
  • Diced tomatoes.
  • 1 lb. of ground-round, or chicken breast...unless you are a herbivore, which can be substituted with more beans-add some black beans or more veggies like zuchinni...sky's the limit.
  • Onions. Amount, your limitations.
  • Chopped garlic cloves. Fresh of course.
  • Spices: Oregano, Jamaican Jerk, Chile con Carne, Cumin, Fennel, Adobo...
  • 2 tabs of Immodium 1/2 hour before eating, in the event your GI system wants to raise anarchy.

Kind of nice textural addition to the meal. I also throw in about 8 egg whites for a boost in protein - I make a big batch so I'll have several portions for leftovers. They make a great lunch to take to work!

    54. Picked up some frozen stir fry made by Green Giant
    All I had to do was add the chicken. I got some rice in a bag that only took 90 seconds to cook. Dinner was done in 15 minutes and it didn't taste too bad either. The kids had pizza.

    80. Comfort food (because it's so cold!): red beans & tortillas with
    anaheim chiles, tomatoes and queso freso.

    Tomorrow night: English comfort food - vegetaran (bean) meatloaf with home fries and sauce with Sage Derby cheese.

    Monday night (when it's warmer): Classic French sorrel soup with new potatoes and brie.

    85. We had a surprise 30th birthday party for a friend of mine...there was just about
    everything here. We had sushi, burgers, hot dogs, sausages ( all on the grill ) as well as several succulent desserts made by a lady in town who has her own business. I'm stuffed :party:
