YUMMMMM! Mexican Lasagna for supper tonight!

My Tony is an awesome cook, and this recipe is DEE-licious---but it's also easy:

Mexican Lasagna

1 pkg. 10 large (8") flour tortillas
1 pound ground round
1 pound chorizo (Mexican sausage)
1 cup whole-kernel corn
1 cup salsa
1 15 oz. can tomato sauce
1 pkg. Old el Paso taco seasoning mix
16 oz. cottage cheese
2 eggs
1 tsp. oregano
1 1/2 cups shredded Monterey Jack cheese

Heat oven to 375 F. Brown meat and drain well. Add corn, salsa, tomato sauce and taco-seasoning mix. Simmer 5 minutes, stirring frequently.

In a mixing bowl, combine cottage cheese, eggs and oregano.

Line a greased 9 X 13 baking dish with 5 tortillas, overlapping the edges, and spoon 1/2 the meat mixture onto them. Spoon cottage-cheese mixture over the meat. Layer the remaining 5 tortillas and add the remaining meat mixture and top with the shredded cheese.

Bake for 30 minutes, or until the cheese melts and the casserole bubbles. Let stand 10 minutes before cutting and serving.

3. oh that is making me hungry
we still have to decide what to have for dinner tonight... and now Thai take-out suddenly sounds less appealing. Maybe I will bookmark this. The mention of sausage makes me wonder, do you guys make Paella?

5. Yes, he does!
His Dad is from Veracruz, though, so we usually make it with shellfish, although the sausage variety is yummy, too. :)
