i just ordered our bird for thanksgiving

i just ordered our bird for thanksgiving
this is our first year making our own turkey, so it shouLd be exciting and hopefuLLy not an adventure.

we ain't fucking around though:

- we're taking turkey cLasses
- we're going to brine our turkey the night before.
- we're going to buy the meat injector (aLways wanted one, so now's as good a time as ever) and inject the bird with (most LikeLy) appLe cider and some herbs.
- make the gravy and stuffing from scratch (never tried before)

so who wants Leftovers?

glad to see you're brining and the cider/herbs injection sounds great (I'm using an herb brine for my extra flavors).

What are the sidesdishes?

9. yeah, we're gonna actuaLLy buy brine from
the pLace we take our cLasses (wiLLiams sonoma) rather than make our own. i figure for a $22 kit (incLudes bags and big jar of turkey herbs for the brine) it wouLd save time, and most LikeLy money depending on the amount of herbs we don't have on hand.

we're stiLL working out the menu but....

- mashed potatoes
- dressing/stuffing

those two are set in stone. we're aLso making a squash dish (haven't decided which yet), and this whacky green bean dish that bi-baby found (i can't remember what it was), and some version of homemade cranberry sauce (we might tweak it a bit).

am i missing anything?

we're aLso having a sLovakian over for the hoLiday so we might (big might) try to throw in a sLovakian dish for him. :)

15. I have a really good recipe for sweet potatoes or yams
with cranberries and a crumble topping. It's a vegetable and a dessert.

i'm hit or miss on the yams. it's either an incredibLe dish, or an incredibLy nasty dish.

i've tried the yams with the marshmaLLows dish - yuck. x(

They found microscopic cancer. This should take care of it, but it still sucks to have to have surgery. Glad things have been good with you. :-)

Too long and the turkey gets a chewy texture.

i onLy know thanks to the first turkey cLass.
judging on the size of our bird, i'm thinking 8 hours wiLL do the trick. :9

the onLy thing i'm wary about with the brine, is the aLmost useLess drippings we'LL have - ie: too saLty. doh!

That sounds great! We're going to my family gathering where I'm responsible for bringing the Sweet Potato Casserole. I roast and mash sweet potatoes, add sugar butter and eggs and vanilla and top it with butter, brown sugar and pecans. Nobody really cares if I come as long as the sweet potatoes get there!

I'm looking forward to hearing how your bird comes out. swimboy love to all three of you! :loveya:
