So what are you making for supper tonight?
I'm sauteeing up some fresh mushrooms (those little white ones, not the big shitake ones - one bite and you'll empathize with the bugger who coined that name), sweet red peppers, with some oriental and citrus seasonings with a splash of white wine because the buzz I get from it is far more palable than sticking my finger up a light socket.

So what are you having? :9

1. ordered a pizza
doc told me today my cholesterol was high and to cut out cheese. i ordered extra cheese, pepperoni and green peppers :D

And it's done so I'm gonna go feed my chilluns 'fore they try and take chunks out of each other.

Not that feeding them will necessarily Stop that -- but at least they won't have the justification of hunger.

5. Garbage pizza
from the supermarket. Fresh made, everthing on it, hence the "garbage" label. That's what we used to call the eveytbing pizza from our former favorite neighborhood Italian place, CDB's in Temple Terrace, FL.
Fixing to go heat up the ole oven, then pop it in for 20 min. Should be ready in time for KO.

9. Zapped chicken and dumplings my neighbor brought me
a few days ago. She knows I can't cook -- not that I don't know how, but I can't use my propane stove in this RV right now, and it's too hot today to do it anyway.

My neighbor and friend Paula learned last winter that a favorite of mine was C&D made with skinless, boneless chicken (she cooked, then boned and skinned fresh leg quarters), the broth left in the pot, and canned biscuits (I use Bisquik, but they're very close). Only seasonings are very small amounts of salt and plain old black pepper ... each person served can add more if s/he likes.

It's always amazing to discover that another cook prepares a certain dish almost exactly like I do -- even when it's a simple recipe. That's what happened with the C&D and Paula and me. :)

Because we cook the chicken with the skin ON, then remove it, we let the broth cool some and then skim off a good portion of the fat. It's always a balancing act between removing too much flavor and consuming too much fat, of course!

Paula made such a big pot of C&D this time that she not only shared three hefty servings with me (finished the last one tonight) but also gave me an even larger bowlful to take to my brother who lives three miles away. He finished his more quickly than I did -- no surprise there!

My brother just discovered last week that he is now diabetic (Type 2). :( The C&D was his last indulgence in his old eating habits; from now on he'll have to learn to fix meals for diabetics, and I plan to help him find good recipes for tasty versions of the traditional foods he likes if I can, plus encouraging him to try new things. Paula has volunteered to try out new recipes I find or think up.

---> And in that regard, if anyone here has some good sugarfree or very low sugar and low carb recipes you don't mind sharing, I'd LOVE to hear about them! (See, there was a good reason for my rambling this time! ;))

HypnoToad, you sound like a gourmet cook or at least one who is good at preparing tasty but healthful meals. I appreciate the description of your supper you offered in the OP! :hi: :applause:

I'm only good at descriptions. Not really good at cooking it, I just throw the food in the skillet and hope I did it right. It's kinda like dating! :rofl: But you know what they say about practice... :7

Sorry to hear about the diabetic prognosis re: your brother. :( I'm prediabetic myself, so I'm careful as to what I eat. Apart from the crap I've eaten the last 2 days in training; I needed the sugar rush. Then I changed my mind. (oops)

Especially about the practice thing -- though I never was very comfortable with any "dating scene" I've observed or tried. Even way back when it was more, uh, er, "genteel" (can I say that here amidst the younger set?) in nature, dating always seemed to me something that's better done without all the pressures and painful rituals.

Guesswork is okay for some things, but definitely not for something as important as finding a kindred spirit to share life with. In fact, IMO true connections can only be established when both parties are NOT feeling pressure to be what they are not -- a goal which could never be achieved anyway, if we really stop to think about it.

Learning to prepare food well is very doable and can even be a fun challenge, I believe. I've always thought that insistence on perfection can get in the way of appreciating happy surprises and serendipitous delights.

I'm probably pre-diabetic too. All the women in the last generation of my mom's family have been diabetic, so I've always been alert to the possibility that I might face such a diagnoses at some point as well. I figure it can't hurt to go ahead and learn to eat the way I'd need to if I'm diagnosed sometime down the road.

Perfection? Nah, I'm realistic. But progress on the journey is very satisfying ... in any endeavor! :D

So keep cookin', Hyp -- you're more "hyp" than you may think.

12. Grilled chicken breasts marinated in Newman's Oil & Vinegar dressing,
cottage cheese along with it. The Newman's dressing works GREAT for chicken, if you're into that kind of thing!

no, silly, not Alpo or Kal Kan; Bush**co hasn't reduced me to that, yet. "Dog food" is the name Repuke Stepdad gives to loose ground beef, i.e. not formed into burger patties. After browning the dog food, I will add it to some Newman's Own spaghetti sauce (on special a couple of weeks ago), and serve over rainbow (what else?) rotini.
