I'm hosting a dinner tonight and thought you might be able to help.

1. Spinach Salad
open 1 bag spinach
put spinach into bowl
slice mushrooms (unwashed) and toss
crack 1 raw egg into salad and toss
serve

3. spinach salad tartare with chicken vinaigrette
1 bag of fresh spinach
1/2 pound of raw hamburger meat
2 raw eggs
slivered carrots
1 bell pepper
1 tomato
1 onion

vinaigrette dressing

the juice of 1 whole thawed roasting chicken
a mixture of 1 part balsamic vinegar to 2 parts olive oil
2 crushed cloves of garlic
lemon zest
the juice of half a lemon.

6. Spanokotopita (I'm making it tonight for a party)
1 package phyllo dough (defrost overnight in the fridge)
2 small packages of frozen spinach (the box size, not bag), defrosted and all water squeezed or drained out)
1 large chopped onion
1 bunch scallions/green onions, chopped including green tops
6 eggs
combined cheeses to your liking (I use about 2 cups mozarella, a small tub of ricotta, and lots of feta, but I don't really measure it)
1/2 to 1 cup chopped dill
1 lb butter (margerine will not work on phyllo dough)

Melt 2 tbsp butter in fry pan. Add onions and scallions, cook briefly. Add spinach, cook until all moisture is gone. Put mixture in a ceramic (not plastic) mixing bowl. Add the eggs, cheeses, dill, salt and pepper to taste.

Melt two sticks of butter in a small pan. Remove phyllo dough from package, roll out on a large serving plate. Cover with wax paper and a damp dish towel on top of that. Using a pastry brush, grease a 9x13 pan with butter. Take one sheet of phyllo and place it in pan, then brush generously with melted butter. Repeat for a layer of 6 sheets. Spread 1/2 of the cheese and spinach filling, then layer 8 more sheets. Spread the other half of the filling, then add 6 more buttered layers of phyllo. Score through the top layer, and bake at 350 until golden, approximately 30 minutes.


Hints: keep the phyllo covered in between layers, to prevent it from drying out. Also, fold over edges on alternating ends, because the dough sheets are slightly longer than the pan. Don't panic if you tear a sheet, just be more careful with the next one and it will turn out okay.


This is probably more complicated than you are looking for, but it I've made this many times and people are always impressed. It's not as hard as it sounds, but it is time-consuming.

7. Curried Spinach and potatoes.
Puree or finely chop baby spinach. Add to a pot with a small amount of water, chopped curry to taste, a touch of salt and simmer for an hour. The water should cover the bottom of the pot but not much more than that. It's enough to steam the spinach and hte potatoes.

You get rich, aromatic spinach and beautifilly flavored potatoes.

This same dish, without the potatoes, makes an awesome dish to serve over rice. I usually put diced red bell peppers and tofu in it if I'm serving it over rice.

9. We have this one all the time.
Spinach and mushrooms cooked with chopped garlic and onions in a frying pan, with some balsamic vinegar tossed in close to the end.

10. Spinach and oysters
Stir fry the spinach to remove some of the moisture. Add the oysters and balsamic vinegar to taste. Enjoy.

19. for lunch today I Chopped a head of garlic,
heated it in oil til soft, then added a whole bunch of fresh spinach. I cooked it til wilted, then added a bit of water, pepper and salt and boiled for an hour. Then I ate the spinach over cornbread,with a bit of vinegar, and swooned with happiness.
