Ok, some young girl at work scoffed at my baking skillz...
Yes, I said skillz with a "z". That means my muffins are going to get all gangsta on her tomorrow. I am busting out some chocolate chip cookies, some white chocolate and macadamia nut cookies as well as an assortment of muffins. I am talking Wild Blueberry, Cranberry Orange, Apple Streusel, Banana Nut and Chocolate Chip, baby. Yeah, that's how I roll.

Scoff at my abilities, psh, I was baking muffins when she was in diapers.

Hasn't she ever heard of the Keebler Elves?

8. Seriously, how do you get a muffin to have that "just right " consistency,
like perfectly airy --- not like the uncooked goopy inside you get at Starbucks and not too dry like a stale coffee cake. It seems to be an art. I imagine humidity is a factor, no?

11. the other day I was gloriously right on the money
However, I think it was dumb luck. I better not blow it this time.

I place them in a plastic Ziplock bag after they cooled down a little, I zipped it about halfway shut and let the humidity condense in there just a little. It kept them perfect for the next day. Although, probably wouldn't be too good if they sat out for a few days.

25. You don't over mix it, for one thing
True of most quick breads.

I have friends where the wife thinks she is the best cook to ever hit the ground running. In reality, much of what she cooks is perfectly awful - she is, for instance, the only person I've ever met who could get the five dozen cookies they say you can from the Toll House chocolate chip recipe. Once she went on vacation and left her husband a batch of little tiny muffins. We were visting him, and he went and got the container, telling us how she'd left him all these homemade muffins for when she was gone. Then he opened the container and showed us, and he said, "Dry as dust!"
