I'm watching Emeril, and he was chopping up some shallots and said, "If you don't have shallots, you canuse red wine" and then went silent.

I said, "What the *#@&*&$#? Red wine for shallots?"

And a second or two after I said that out loud, Emeril came back with, "I mean red onion".

3. I've been coming to the conclusion that I think he's half in the bag
most of the time. Not quite drunk, but I have a feeling that he has a fairly constant stream of alcohol going through the system. Just enough to get him kind of lit, but not incapacitating.

Who would listen to any advice on food from a boring puritan?

Appreciation of good drink nearly always goes with appreciation of good food - in my experience.

I have a soup cookbook from a teetotalling Jesuit Brother who cooks for his brotherhood - good recipes, but the writing and the recipes are lacking in liveliness and, I don't want to say they are devoid of joy, but it's close to that. I can't think of or find the word I'm looking for... not boring or tepid, but somewhere around "standard". Uninspired, maybe. I don't know.

25. If you can't find chorizo, a good substitute is
a jar of cocktail franks. Trust me, there's no difference. In fact, cocktail franks are a good substitute for kielbasa, Italian sweet or hot sausage, salami, pepperoni, bratwurst, liverwurst....

There really is no way to eat something that is 50% booze.

Ask people in New Orleans how they feel about Emeril and you'll get quite an earful. That guy couldn't cook a chestnut roux if he tried (since it can't be done in 20 seconds over high heat like everything he cooks).

31. I didn't have chicken stock for a soup tonight, so I used DDT
Couldn't tell the difference!

I also made a dessert that called for caramel, which I didn't have, but I did have napalm, which also has two "a"s. Spicy!! Woo!! Felt like my mouth was on fire. It was great!!
