Poll question: What should I make for dinner?
Keep in mind that I'm limited to ingredients onhand due to my f'd up car and not having anybody home who could run to the store for me, so no wild suggestions please, but thouughts of other vegan alternatives relying mainly on pantry goods are appreciated.

Veal with a pork and chicken gravy.

Lol, sorry. Actually all your choices sound really good. I love eggplant, so i would go with that. :thumbsup:

Egg-battered and floured eggplant that's been deep-fried is one of my favorites too.

Ever had fried okra? Covered in corn meal and deep fried to a crispy crunch... oh those wonderfully decadent Southern delicacies.

6. I go south just for the food
The people are ok, but not as pleasant as the food down there.

I make eggplant on the grill with lemon butter and Parmesan cheese. Although that is not well liked by the vegans on DU...lol.

13. I am not even sure what the first two on the menu are.
And I know spaghetti is a little more involved if you are cooking the sauce from scratch, so I went with chili. That way, you can just throw a bunch of tasty stuff in the pot and chow down.

14. The punjab eggplant is shredded eggplant in a spicy sauce
It comes in a boil-in-bag packet and I serve it over rice. http://www.tastybite.com/product_p/i00004pe.htm

The raviolis are just little bits of stuffed pasta. The ones I had were from this brand: http://www.putneypasta.com/entrees.shtml

To be honest, I can't form an opinion about anything with eggplant in it, because I have never had eggplant at all. :shrug:

The ravioli I am used to is made my Chef Boyardee (most people pronounce that boy-r-d, but I say boy-yard with a silent "e" to make it sound fancier than it actually is.) :P

Have you ever heard of him?
He makes these fine products:

Apparently, he was a real chef, but misspelled his name so us poor dumb Americans :eyes: could pronounce it easier, then started selling it in cans. Later they made it so we could microwave his recipes straight from the can. :P

I sure would have loved to have had some of the original menu items. I practically live off Chef Boyardee and Hamburger Helper.

17. Eggplant is like tofu on the vine. Or chicken breast if you prefer.
It tastes like nothing. You have to season it or bathe it in a sauce to make good food of it. It's good when you do though. I'll get around to posting a recipe for breaded eggplant one of these years.

18. So, I take it is is similiar to potatoes
in a way, where you can sort of us it as what my aunt calls "a staple." That just means a food that is versatile, can be used as a base ingredient and can be prepared many different ways.

I'd love to try it one day. Sounds nice. I had PB&J today. I still don't know why that is considered punishment on Big Brother. I like PB&J. :shrug:
