Dinner tonight: California BBQ Tilapia
Instructions:

Fire up the gas grill (yes we use gas here) and fill the smoke box with the cabernet smoking chips

Then marinate 6 tilapia filets in a mix of lime juice, salt, minced fresh jalepenos and a spash of cheap tequila. Soak for about 20-30 minutes

Spray nonstick on the grill and throw each filet on the grill, right above the smoke box. Cook for about 3-5 min on each side.

Yummmmmm

3. The grill ain't hot enough then - or its not sufficiently lubricated
The three rules of grilling fish are heat, oil and speed.

You must heat the grill up really hot. So hot it sears the fish upon contact. You must also oil it (non stick works) right before putting the fish on. And you can't grill it too long. Last thing you want is dry fish.

4. I have...
I have non-stick spray, and I don't have much luck with that on the grill or using in frying pan. How much do you spray on?

6. Enough to cover it - but i spray it on right before putting the fish on
and after it heats up

Love fish, especially grilled. I'm planning on grilling lake salmon tomorrow.
