Does anybody have any good recipes for portobello mushrooms?
Unlike those little white mushrooms I devour on their own, these big portabellos have a really weird and wacky taste... I can't eat them alone. :(

Any tips?

1. Stick them under the broiler with whatever topping you want.
In fact, post this on the Vegetarian, Vegan and Animal Rights forum. They will have plenty of recipe ideas.

3. This is how I like them...
Get the Annie's Shiitake Sesame Vingarette. Slater the mushroom in it and then grill it on some foil. It comes out really good. Actually, that dressing is a good marinade for any grilled veggie. Then, I just eat them like that or make a sandwich with them.

5. I put 'em in my veggie "fajitas."
Grill up some bell peppers (red, yellow, orange) and an onion, add spices, or just a packet of that "fajita mix" if you're in a hurry. Add diced portobellos. Scoop into a big tortilla, and cheese, sour cream, and you're done.

6. Soy sauce and butter
melt the butter in a wok or fry pan at a med high heat, add the mushrooms and cover with the soy sauce, stirring them in the mixture until all are covered and look happy (as much soy as you like or as little as you need), turn your fire down to low and cover, letting the mushrooms simmer in the mixture.

My favorite way to make any type of mushroom. :hi:

7. I marinate them in a simple vinegrette
(balsamic vinegar and a bit of olive oil and some herbs) and then grill them gill side down for about five minutes. Flip them over (gill side up) and put pieces of blue cheese in the gills. When it is melted, they are done.

8. Stuff them with ground lamb and pine nuts
stick in the oven until meat is done, top with a nice swiss cheese and broil until cheese is melted.

If you want an alternative (albeit an expensive one), mix minced shallots and truffles with the lamb and pine nuts.

9. Found this one with a google search...sounds yummy:
Oakshire Portobello Pizza

Oakshire Portobello Mushroom caps, cleaned and stems removed
Extra virgin olive oil
Tomato sauce, homemade or good quality purchased
Grated cheeses: fresh mozzarella, provolone, parmesan, locatelli, cheddar, etc.
Freshly chopped herbs

Preheat the oven to 400 degrees. Rub the portobello with extra virgin olive oil and place gill side up on the baking sheet. Bake for 7 minutes to soften. Remove from the oven and let cool. Pour off any juices.

Top each roasted portobello with some tomato sauce and then grated cheese. Return to oven and bake until the sauce is bubbly and the cheese is melted. Sprinkle with freshly chopped herbs and serve immediately.

10. For quick and dirty cooking
I cook them in au jus or french onion soup, then top with whatever is handy, cheese, bread crumbs, tomato sauce, etc.

13. I sell them to un-expecting deadheads
Or I soak them in some marinade (anything that sounds good to you), grill them along with sliced red peppers and top the shrooms with mozzarella.
