Quiche a la mexicana
I decided to make a quiche tonight. After examining the pantry I realized I had a nice combination of fresh Mexican ingredients. I substituted a whole avocado for cream, and added the juice of a lime, onion, garlic, red pepper, chipotle pepper powder, and cumin.

I just took it out of the oven. It looks amazing. I'll post after dinner and let you know how it was.

3. Well, have an abbreviated recipe
Here are my notes:
1 recipe short crust.

Filling

1 large avocado, ripened
4 eggs
1/2 cup milk
juice of 1 lime

1 small onion, diced
1-3 cloves garlic, minced
1/2 red or green pepper, diced
1 tomato, peeled and chopped

1/2 tsp chipotle pepper
1/2 tsp cumin
1/4 tsp salt

Prepare short crust. Chill. Roll out and line quiche pan with it.
Saute diced vegetables in butter or olive oil.
Blend avocado, eggs, milk and lime juice in blender.
Combine egg mixture, vegetables and spices.
The mixture should be very smooth like cake batter.

Bake at 375 F for 25 minutes or until just a little brown on top.

Serve with salsa and cilantro.

Next time try: Garnish with queso fresco, don't saute the vegetables.
Chorizo could be a good addition.
