22. Thanks for recipes. Canning isn't so mysterious once you
try it. Get a good cookbook, talk to an oldtimer.
Basically it is making sure everything is clean and
sealed well. I've made jellies pickles, etc.
You can do it!

24. I've been talking to an older woman
who swears I can do it. (She also wants to teach me how to quilt.) It's just the old fear of botulism or even having a can explode if done improperly.

Right now I freeze and dehydrate what I grow but if I could can it would add so much more to what I can store away for the winter!

31. Sure, you can do it. I have. You can usually tell if something
has gone bad - off color, oozing, or seal doesn't pop.
Give it a try with a small batch of jam or jelly.

Now I must decide what fruit to start with...

(I just like saving money and knowing what's really in my food. Canning can be costly as a startup but in the long run you can save money-especially w/ the cost of gas right now. Who knows what groceries will be this winter! Besides, I know the only additives are what I put in it.)

And kudzu is everywhere so I can go picking it on the roadside.

Isn't that sad? I'm thinking of free food right now after seeing gas starting to jump in price here again.

I just found the recipe. Another was a pork tenderloin.

Pork Tenderloin with Kudzu Salsa

4 servings

½ cup soy sauce

1 tablespoon sesame oil

2 teaspoons teriyaki sauce

2 garlic cloves, minced

1 teaspoon ground ginger

1 pound pork tenderloin

½ teaspoon oregano

½ teaspoon cumin

¼ cup honey

2 tablespoons brown sugar

Kudzu salsa:

1 cup diced freshly boiled Kudzu stems

1 large tomato, diced

1 tablespoon minced red onion

1 teaspoon olive oil

¼ teaspoon salt

2 tablespoons honey

1 tablespoon cilantro

1 tablespoon lime juice

• Combine first 5 ingredients in a large shallow dish or heavy-duty zip-top plastic bag. Add pork. Seal and chill 6-8 hours;

• Remove pork from marinade, discarding marinade. Sprinkle with oregano and cumin;

• Stir together honey and brown sugar. Brush pork with honey mixture; place on greased rack in roasting pan;

• Bake at 400 degrees 25-30 minutes or until thermometer reaches 160 degrees. Cut pork into slices; serve with Kudzu salsa;

• To prepare salsa, combine all ingredients, cover and chill until ready to serve.

NUTRITIONAL INFORMATION PER SERVING:

Calories 334.8; protein, 34.3 grams; carbohydrates, 44.4 grams; total fat, 10.2 grams; cholesterol, 89.4 milligrams; saturated fat, 2.5 grams; dietary fiber, 2.8 grams; sodium, 1363 milligrams; sugar, 18.3 grams; vitamin A, 64.7 retinol equivalents; vitamin C, 11.5 milligrams; calcium, 36.6 milligrams; iron, 2.9 milligrams; alcohol, 0 grams.

Kudzu is also a popular comic strip set in Bypass, NC that satirizes the culture and mystique of the South.

Basket makers have found that the rubber-like vines of Kudzu are excellent for decorative and functional creations.

Common names for Kudzu include mile-a-minute vine, foot-a-night vine and the vine that ate the South.

Kudzu was introduced into the U.S. at the Philadelphia Centennial Exposition in 1876 and into the South at the New Orleans Exposition during 1884-1886.

Chimney Park, NC holds an annual "Krazy with Kudzu" festival. Over 2400 people attend to taste kudzu jelly, french fried kudzu leaves and learn about everything you can do with this pesky plant; there's even a Kudzu Queen.
