Blue Cheese and Black Olive Tarts
250 ml (1 cup) all-purpose flour 125 ml ( 1/2 cup) butter 125 g (4 1/2 oz) blue cheese 5 to 10 ml (1 to 2 tsp) whole-grain mustard Water to mix 16 black olives, pitted and halved 8 cherry tomatoes, cut into quarters 3 eggs 125 ml ( 1/2 cup) single cream 60 ml (4 tbsp) milk Salt and black pepper
Preheat oven to 205 C (400 F).
Make pastry by sifting flour into a bowl; cut butter into small pieces and rub into the flour to form fine crumbs. Crumble or finely chop 50 g (2 1/2 oz) of the blue cheese and add to pastry mix with mustard, then add sufficient water to combine and mix to a dough. Wrap in cling plastic wrap and chill for 15 minutes. Roll out pastry and use to line 8 individual tartlet cases.
Roughly chop remaining cheese and divide between the tartlet cases along with the black olives and tomato quarters.
Beat together eggs, cream, milk and seasonings and then pour carefully over filling in cases. Place on a baking sheet and bake for 15 to 18 minutes until custard is set and just golden in colour.
Serve hot or cold with salad.
Makes 8 tartlets.
