my recipe for Lemon Bars. They were an absolute _hit_ at the last meeting of the DU Junior League (Gingham Chapter). :P

Lemon Bars
1 c. all-purpose or unbleached flour (125 grams)
1/4 c. powdered sugar (30 grams)
1/2 c. butter (115 grams)
2 eggs
1 Cup white sugar (225 grams)
2 Tbsp. flour (About 28 grams)
1 Tbsp. grated lemon peel (one big spoon)
1/2 tsp. baking powder (1/2 small spoon)
2 Tbsp. lemon juice (2 big spoons)

Heat oven to 350° F (180°C). In large bowl combine flour and powdered sugar; cut in butter until crumbly. Press flour mixture into ungreased 8 or 9 inch square pan. Pre-bake at 350° F (180° C.) for 15 minutes.

While the crust is pre-baking, beat 2 eggs and sugar in a small bowl until they're light colored; stir in remaining ingredients. Pour egg mixture over partially baked crust. Return to oven and bake 18-25 minutes or until light golden brown. Cool completely. Sprinkle with powdered sugar. Cut into bars. Makes 24 bars.
