7. No you have beer in there, it comes up and moistens the chicken as it
roasts. I usually chop up some garlic and onions to put in the beer.

raspberry- horseradish dipping sauce.. It sounds like a weird combo, but it's really good..

(I have no idea where the name comes from, but almost every seafood joint in FL has them..)

15. You can usually get them at the seafood counter.. If you don't like
water chestnuts, you can get them with snow pea pods instead.. I like them both ways..

If you can't get them at your seafood counter, they're really easy to make.. (I've only found them pre-made in FL..) You just par boil the bacon, set the raw scallops on the water chestnuts (or snow pea pods) and wrap them up with the bacon.. Stick a skewer through them and set them on the grill until the scallops lose there shine and the bacon is crispy.. For the dipping sauce you take cocktail sauce and add raspberry preserves to it, to your specific taste.. (I add a little extra horseradish cause' I like a little kick..) Or you can just use cocktail sauce alone. I like it better with raspberries though..

17. Sounds great, we'll have to try and make these sometimes, with and without
the water chestnuts. I definitely like the idea of the raspberry flavor, and I know my wife would love that. I'd definitely be a horseradish guy, she would not like that.

Scallops and snow peas is a very classic combo in Chinese cuisine. I'd like to try that version as well.

24. Ooohh.. If you make them with the snow pea pods, make sure that they are
completely wrapped up in the bacon.. The snow pea pods have a tendency to burn if there not completely wrapped up.. Also, they are good broiled in the oven too.. Just fyi... (I didn't want you guys catch something on fire, cause I nearly did the first time I made them that way.. I had to learn the hard way..)

Still at work since 7 a.m. Computer Room UPS was being serviced and tech casued a outage that took down the entire server room causeing hardware failure on a major server.

What ever is brought in.

Wife is at home with leg of lamb, navy bean salad, with onions andmustard - and new potatoes with butter and garlic.

Chocolate....and beer. New Glarus Road Slush stout....or Moose Drool...

made with leftover roast turkey I bought on sale few weeks ago. I froze the carcass and picked off the meat to make the pie today. I love roast turkey - we have had so many meals from that one bird!

We're rounding out todays meal with a mixed green salad with gorgonzola and cranberries and yellow cake with chocolate cream cheese frosting. :9

30. Looking good, there. I found a glazed stoneware or
maybe pottery ring designed just for beer can or soda can chicken roasting. You just pour the liquid into the center core, which is a few inches taller than the bowl part, and the bowl part catches allt he dripping. Looked pretty cool. It sort of looked like a tube cake pan with the center post much taller than the outer wall of the pan; except it was made out of this really pretty glazed ceramic/pottery/stoneware stuff.

I have also seen a really cool grill thing for the vertical roasting with or without the can of liquid. I have an early version of the vertical roaster but it has a very small drip pan so doesn't do a very good job catching everything. This new one I saw at Central Market is designed for grill or oven and has a nice sized tray, at least 12" in diameter.

I love the way the chicken cooks on the vertical roaster, though.
