How long do you steam asparagus?
Two pounds to be exact.

No kidding- I screw it up every time!

My entire family thanks you in advance.:)

1. Until tender
It depends on the asparagus. Start at 6 minutes and check. If the fork slides through it's done.

2. White asparagus?
18 - 25 minutes. Stick a fork in the heads to test; they should not get mushy. If the end of the aspargus is still too hard, cut it off. You won't be able to steam the whole thing equally.

4. Here in Connecticut, you would cook it "al dente"
Keep it bright green, not pale green. If it is totally limp, it is overdone, period. Slightly chewy is best. Get the nice thin kind. Use a steamer basket (it won't fit but use it anyhow).

7. cut the stalks in three sections

the base goes into the steamer 1st (since it's toughest) springle liberally w/ kosher salt; the salt brings out a deeper green color.

the center section goes in 5 minutes later; again, sprinkle w/ salt.

the tips go in last & cook for no more than 2 minutes. again; salt.



drain all in collander & blanch w/ cold water to stop it from cooking further & to rinse off excess salt.

when ready to serve, microwave each serving on high for 33-44 seconds, season w/ butter.

asparagus will def lose it's flavor if not cooked "al dente"; ie, slightly crisp.

8. Try baking it
Olive oil, salt and pepper, in a single layer on a tin thingy of similar. 350 for ten minutes, tops. :toast:
