How the fuck much is half a bunch of cilantro?
President and Laura Bush's Guacamole Recipe

8 ripe avocados
4 lemons, juiced
7 shallots, finely chopped
1 jalapeno pepper, seeded and finely chopped
1/2 bunch cilantro, finely chopped
1 tsp black pepper
1 Tbsp salt

Halve and pit avocados and scoop out flesh into a bowl. Mash to desired consistency and mix in remaining ingredients. Cover with plastic wrap and refrigerate for about an hour before serving. Serve with tortilla chips.

17. I love it too. Salsa without cilantro is just plain ol' New York City
imitation. We don't use cilantro in our guacamole. Instead of jalapenos, we use chile serranos, which have more heat and better flavor.

5 ripe avocados
2-3 HEAT ROASTED jalapenos, seeded and diced
1 pkg. cream cheese (at room temp)
1/2 t. salt
1 t. onion power
sometimes I throw in a little garlic powder if I'm feeling cheeky.

Roasting the peppers is very important, it unlocks the real flavor.

Mash it all up together, use a mixer so it's blended real good.

Guaranteed not to last more than 3 hours.

24. Forget their lame recipe. Here's the best one (my own) and it's very easy.
1 large or 2 small cloves garlic
1/4 teaspoon salt
Juice of 1 lime
1/4 cup green taco sauce - not red
3 or 4 large Haas avocados, very ripe but not brown inside

Mash garlic with a garlic press. Add salt and lime juice, then add the green taco sauce. Use more sauce if you want it spicy. Use only Haas avocados - do not use Fuerte, Bacon or Zutano. Cut avocados in half and remove pits. Dice avocado flesh while still in shell, then scoop out with spoon. Add diced avocado to the mixture, and stir just until it blends in. It should still have small chunks throughout, it should not be a smooth paste. Cover and refrigerate for one hour. Never add tomatoes or any seasonings other than what is listed above. This recipe never fails - they will gobble it up.

fresh cilantro is sold in bunches- all roughly the same size. Cut the stems off and then halve that amt. and you have half a bunch.

but...imo, it's not guacamole without tomatoes and garlic. I think this would be a shitty quac.

I almost forgot- LIMES not Lemons in guac, sheesh, it's so obvious these people are not from texas!

This is approximately how big their cilantro bunches are:




It will compact a bit if it's minced up really fine. I'm thinking -- half a bunch is something like a third to half-cup? I have cilantro in the back garden, so I'm trying to estimate the number of stems needed to make up that amount. 15 to 18, maybe? It does depend on how old the plant is (how long the stems are).

Personally I've always considered it a matter of taste -- my roommate would deliberately put less into the recipe when making guac or salsa for a party, in case visitors disliked that particular ingredient. She loved cilantro and would set aside a small bowl of it for herself, figuring she could always add extra to her portion.
